Simple Deviled Eggs

These were a hit at our house! I was hesitant adding the sugar and it tasted a little salty the night before I served them, but the next day they were perfect. I used dijon mustard and sprinkled a little smoked paprika on top... a tip for the smoked paprika, wait to add until right before serving so you don't lose that smoky taste. Wonderful and thank you!

Grammy's Overnight Lasagna

Really good!! I didn't want to wait overnight so I soaked my noodles (just regular and not oven ready,) in hot water while I started the sauce (about 30 minutes.) I did as the others suggested and added an egg to the cottage cheese and vamped up the meat sauce with basil, mined garlic and onion. I used two 24 ounce jars of sauce and omitted the water which made two 8x9 dishes... one to eat and one to freeze. Next time I'll add some italian sausage. I never knew how easy making lasagna could be. Thanks for the recipe!!

Black Bean and Corn Quesadillas

I love the simplicity of this recipe. I think the Monterey Jack cheese makes this! I usually wouldn't cook Mexican with Monterey Jack cheese. I cooked mine in the oven as other's suggested with broiling for 2 to 3 minutes at the end for browning (don't forget to spray with non-stick cooking spray!) I doubled the salsa and did not add the in sugar at all. Mine made 9 healthy but small quesadillas. Thanks for the recipe!

Slow Cooker Ham and Beans

This turned out great for us! I used a leftover ham bone that still had lots of ham and was particularly tasty in this dish and I cooked it in the slow cooker for 8 hours which was probably at least an hour too long (but still great.) I did not add the sugar because I already know we don't like sweet Northern beans and I added a bay leaf which I think really added to the taste. I probably added more garlic than the recipe called for. You can definitely taste that small amount of cayenne pepper. We loved this dish but I think the quality of the hame bone/meat may be key to making this a great one...ours was great! Thank you!

Roasted Garlic Cauliflower

We loved this! A friend of mine told me to use a garlic press for the garlic (instead of using minced garlic,) and nothing on my dish scorched or burned at all. Next time I would skip the bag and make this in a bowl as I could never get all of the juicy bits out of the bag. Also I must have had a big head of cauliflower and could not use a casserole dish but used a large cookie sheet instead. For the cooking time, my same friend advised me to cook this in (3) 10 minute intervals, shaking or stiring up the cauliflower each time, adding the parmasan cheese in the last 10 minutes (I also cooked it quite close to the top of the oven just under the top rack at 450 degrees as stated...truely ROASTED CAULIFLOWER!!... not steamed at all, I did not cover this.) It couldn't have turned out more perfect. I'll be making this ALOT! Thank you!!

Honey Baked Chicken II

Really good! I made mine with chicken thighs and took another's advice to bake it covered in foil at 350 degress for the first 30 minutes. Then foil is removed and chicken is basted, basking for another 40 minutes or so until nicely browned. I decreased the butter to 1/3 cup and increased the curry to 2 teaspoons. I'll definitely make this again! Thank you!

Lemon Pepper Zucchini

This was really good! I added a little garlic powder, cut down on the lemon pepper and added a little freshly grated parmesan cheese toward the end of cooking. I think I'll cut way down on the butter next time as I ended up buttering both sides of the zuchinni and it was too much. Don't cut the pieces too small as they cook quickly! Thanks for the post!

Delicious Egg Salad for Sandwiches

I have always loved egg salad and was surprised to find how good it was with a little mustard and green onion mixed in! This has the perfect ratio of eggs, mayo and mustard and I took the advise of another and mixed cold mayo with the still hot yolks. This one's a keeper! Thanks!

Italian Meatball Sandwich Casserole

I omit the water and brown the bread cubes (or slices of bread.) I've also used precooked frozen Italian meatballs. My kids like it on occasion. I love it but it's too fattening for me!

Buffalo Chicken Dip

Really good! I discovered Neufchatel cheese...same great cream cheese taste but so much lighter in taste! I took the advise of another reviewer and layered the ingredients (cream cheese, chicken mixture and shredded cheese,) but I think I'll mix all of the ingredients together next time. Slow-Cooker Chicken Tortilla Soup

This was a five star recipe for me! I made as directed but did not precook the chicken, omitted the 2 cups of water and used 2 cans of chicken broth which I precooked and had on hand, also omitted the corn, torilla's and the black beans I wanted to add to cut down on the carbs... and VOILA!! Low Carb Chicken Tortilla Soup! I really like the fact that this did not call for a can of Campbells soup as they are so salty. Loved this recipe! Thank you!

Artichoke Chicken

**EDIT** This has become one of my most favorite recipes. Kids love it too. Again, if you don't like artichokes, you won't like it!! **EDIT** Wow, this was great! I forgot how much I love artichokes. Definitely salt and pepper the chicken. Also I substituted over half of the mayo with sour cream per the reviews, used light mayo (could possibly get rid of the mayo all together??), marinated artichokes (squeezed them out a bit before chopping,)and my dish turned out perfect... not too watery or greasy in any way! I would say if you don't like artichokes you won't like this. I loved it!

Touchdown Pizza

What a great idea! This was a hit at our house. As another review said 'I sprung for the Boboli and it was well worth the splurge' :) Never knew how great that crust was! I did change the recipe a bit and added a good bit of Ken's Ranch Dressing on top of the hot sauce prior to topping with the mozzarella cheese. Thank you!

Spaghetti Squash I

Wow, this was great! I've never made spaghetti squash before and I thought I'd need to add some salt or other seasonings to the recipe but it was wonderful as is. I'd probably add a lot more tomato next time. Be sure not to go cheap on the feta cheese!

Creamy Horseradish Garlic Spread

**EDIT: I made this again and I had to change my rating to 5 stars. This is really, really good on sandwiches made with leftover roast beef!! I'll be making this again and again! Thank you! ** EDIT** Just ok as far as my tastes but I gave it a 4 star rating as my son really enjoyed it. I doubled the horseradish and garlic, used a full tsp of the dill.

Slow Cooker Spicy Black-Eyed Peas

Really good, super easy and will make again! The beans do not need to be pre-soaked and thus the liquid content turned out perfect for us. I only used one slice of bacon but otherwise made as directed and cooked in a slow cooker for 8 hours. I won't pre-cook the red bell pepper next time as after 8 hours of additional cooking, they were pretty much pulverized and I would have liked them more intact. I didn't salt the beans at all prior to cooking but felt it needed a little salt. Also, this was not spicy enough for us so I added 3 or 4 squirts of tabasco and a few shakes of Tony Chachere's.

French Egg and Bacon Sandwich

I made this for dinner tonight and it was a hit at our house. I saw this come across my email today and immediately thought of the loaf of day old bread I had...stopped off at the store for the bacon and for less than $5.00 we had a wonderful dinner (I always have the other ingredients on hand.) Bubba's Jambalaya

Wow, this was great!! I've never made Jambalaya before and I also rarely give a recipe a 5 star rating but this was completely deserving. I made it pretty much as directed but used no ham, added 1 tsp oregano, 1 bay leaf, added a pinch of red pepper flakes and probably quite a bit more cajun seasoning (discovered Tony Cashere's creole seasoning... WOW, so much better than the generic cajun seasoning I've been using.) After reading some of the reviews, I cooked the rice separately. Use all of the crushed tomatoe...so good. Thank you for the post!

Navy Bean Soup I

I made this pretty much as directed and initally wanted to rate the recipe a 3. It seemed like it was missing something. I didn't use the tomatoe as that didn't appeal to us and I used mostly chicken broth in place of the water (and still added the bouillon but didn't add any salt and found it didn't need it.) I soaked my beans for 8 hours and threw it all in the crock pot and cooked for about 8 hours. It seemed pretty watery and kind of greasy, so I skimmed almost a cup of grease off the top which made a considerable difference (I used a meaty ham bone,) and I added about an 1/8 of a cup of hot sause, mashed down some of the beans, and cooked it for another 2 hours. I decided to rate this a 4 when my son and daughter couldn't get enough of it! Thanks for the recipe! I'll make this again.

Shepherd's Pie VI

Wow... pretty good! I made this as directed with a few suggested changes. When growing up, my Mother never made Shepard's Pie so I don't have a preconceived notion of what it should taste like, but I loved the potatoes with the finely chopped onions and cheddar cheese. I thought the consistency of the potatoes was going to be too thick but they were spot on. I added 1/4 cup worchestershire sauce to the meat prior to browning which turned out nice and added the brown gravy and 1 cup of water to the cooked meat. I might use the beef broth next time. I would caution others when using frozen veggies (I used frozen carrots and green peas,) as they were not done within the 20 minutes cooking time. I probably cooked mine 30 to 35 minutes which turned out fine. Next time I would at least steam and season the frozen veggies first. Thanks for the recipe!
