Deborah's Grilled Chicken

Absolutely fantastic! My husband (who hates chicken but eats it b/c I like it) made this on the grill last night & said that if chicken tasted like this he'd eat it all the time. It tasted very fresh. He did make a few substitutions - dried basil instead of fresh and Italian cheese instead of Parm. Can't wait for him to make this again!

Tofu Parmigiana

I try to make meatless meals at least once a week - based on the positive reviews I decided to give this one a try. I followed the advice of one of the other reviews & sliced the tofu, froze it & then dipped it in flour, then egg, then crumbs & baked it. My 4 yr old & I would have eaten the tofu just that way it was so tasty! I followed the directions for the rest. I thought it was good, my husband gagged it down (not a tofu fan! ^_^) and my 4 YO said she loved it & wanted to have it for her birthday so everyone could taste how good it was! I'll make this again sometime.

Apple Cake V

Great cake -- people at work loved it. Based on reviews, I did replace the oil with unsweetened applesauce; used 1 c brown sugar & 1/2 c white instead of all white; added 1 tsp cinnamon & 1/2 tsp pumpkin pie spice (probably could've added a touch more). All in all, very easy to mix up and tasted great. I also didn't skimp on the sauce -- made up and poured on all of it. Honestly, the best part! Next time, I might try only putting half on to absorb then giving it time to get just barely warm before pouring on the rest -- the top did have a gooey appearance and maybe having a cooled layer of sauce on top would help. But, I'll definitely be making this one again!

Apple Squares

These were great. I took them to work and within 15 minutes the pan was gone (and there are only about 10 people in the office). I doubled the recipe & put in 9x13 pan (they got about an inch thick). Also, took advice of others and doubled apples (2 cups) and left the topping at the original amount. It is a stiff dough so it was tough to mix the apples in so I might try mixing them in before the flour mixture the next time. I did drizzle on a powdered sugar glaze just to gussy them up a bit. Would also be great served warm with ice cream or made with rhubarb instead (have to try that in the spring). I'll definitely be making these again in the next day or so. Thanks!

Poor Man's Hamburger Steaks

This was exceptionally good. My husband will eat anything I make but doesn't usually say anything either good or bad -- he just eats. Tonight I made this and he said it was perfection... ^_^ Very high praise. The only changes I made were to scale it to use a pound of hamburger & to add half a sliced onion to the top of the patties before the soup. The sauce/gravy was phenominal over rice. I'll definately be adding this to my recipe box... Thanks!

Dill Vinaigrette

Incredible! I used olive oil, full amount of sugar and substituted yellow mustard for the dry (didn't have) - excellent. I'm a ranch dressing person but I actually prefer this recipe to ranch now & I feel less guilty eating it. Thanks!
