About this Cook
I love to cook, my favorite place is in the kitchen,! I come from a long line of faboulas cooks, my grandmother Lena cooked for the harvest crews in the midwest and was know for her delious cooking and baking,her only daughter,(my mom)was a amazing cook as well, known for her mouthwatering pies and cakes,good ol comfort foods,! I come to it naturally and love it, my oldest daughter is quite proficent in the kitchen an amazing little cook, I have a almost 9yr. old granddaughter who is showing a lot of promise in the kitchen as well,my favorite passtime is looking and collecting new recipes and taking some of my mom's and trying to lighten them up,.. Sitting around the table with my family and grandbabies and laughing and enjoying each other and good food is just priceless to me,and a way to keep family close and strong.!!!
My favorite things to cook
first that would have to be with: and that would be with my brother and his wife, we have the best time on Saturdays planning and cooking and trying new things,mexican, Italian,we all are trying to stay healthy and eat light and fresh, I have discovered fresh herbs, now that I'm retired I have more free time, I love basil and now make my own yummy pesto, use fresh Italian parsley on everything,thyme, mint,chives.! It's so great to step out on my deck and pick away. I also love baking just about anything,blueberry muffins,Choc. zuccini cake, one of my favorites.

Awesome Eggplant Rollatine
This was wonderful, alot of work but worth it, I tried baking eggplant in oven, never got level of crispness I wanted, ended up using canola oil and crisping them up in a skillet.Loved the spinach in it which I used fresh chopped not frozen, and a little extra cheese. Yummmm

Greek Couscous
delicious,, made few adjustments, added chopped fresh italian parsley and fresh chopped basil and sliced yellow cherry tomatoes,otherwise stayed pretty true to recipe first time.Big hit with my family. next time will try goat cheese.Its a keeper.

Blue Cheese Burgers
I made this recipe tonite, I to made changes.The use of really good Blue Cheese is Key. I increased worcestershire sauce, used shallot and dijon mustard, garlic, 2 eggs beaten and 1/2 cup bread crumbs,and 4lbs. good ground beef, 80/20%. Gently mixed all together.So as to not have tough dry patties, grilled to perfection. They were amazing. My whole family Loved them. This will be made often.Loved the advice to make extra and put in the freezer.
