Beans, Greens and Garlic Soup

I made it exactly as the recipe stated and it was a little bland. I will try to doctor up the leftovers tomorrow and see if I can perk it up.

Black Bean, Sausage, and Sweet Potato Soup

Very, very good. I used canned beans and almost made it too soupy because I added too much broth. I just pureed another can of beans and added that. It was good the first night, but by the second day it had thickened up and was great. We even used it as burrito filling for the kids and they loved it.

Angel Icing

This was pretty good and fairly easy (though a little time consuming) to make. I would have like for it to have a little more flavor though. I might try orange extract next time.

Banana Pancakes I

My kids really liked the pancakes, but they were a little too "doughy" for me. I had to cook them on really low heat to prevent burning and they still didn't seem "done" in the middle. I might try them again using just one banana.

Amazing Simple Thai Tofu

This was good and it was very simple. My 5 year old didn't care for it, but my 2 year old loved it. I didn't have green onions, so I used reular onions and I also used shredded cocnut rather than flakes. This will make a good stand-by for those nights I need a quick dinner.

Peach Crisp III

Very good! I used frozen peaches and had to adjust the cooking time (lowered the temp & cooked about 10-15 minutes longer). I also used 1 cup oats and added a little more flour & brown sugar because I like alot of topping.

Vegan Stew

I think this recipe needs more seasoning. It was a little bland, even though I used vegetable broth in place of the water. I would probably leave out the rice next time. I would have given it 3 stars, but my kids *loved* it, probably because the parsnip and carrots gave it a nice sweet flavor.

White Chili with Ground Turkey

This was great! Even my 5-year-old and 2-year-old loved it. I reduced the broth to 3 cups and used just a pinch of cinnamon. Last time I made it I used leftover Thanksgiving turkey, diced. Wonderful!

Butternut Squash Soup II

This is a really good soup for a cold winter day. My butternut squash was on the smallish side so I used one small butternut and one sweet dumpling squash. I added just a touch of brown sugar, since the sweet dumpling is not as sweet as the butternut and I used red pepper for a little kick. Yummy!

Easy Spiced Brown Rice With Corn

Very easy and tasty. I like the texture of the brown rice and the cumin is a nice flavor. Next time I will probably add some chopped red or green pepper to give it a little color.

Sarah's Banana Bread Muffins

Yummy! I did half the batch according to the recipe and half the batch with added coconut and chocolate chips. They were both wonderful. My 3yo son helped me make them and he ate 2 all by himself. Great recipe!
