Salmon Cakes II

These were fantastic. A great way to use leftover grilled salmon. I used fresh Parmesan instead of cheddar. I was worried the cakes were going to fall apart, but once they were cooked on one side, the held up great.

Baked Ziti I

World's Best Lasagna

Chicken Noodle Casserole II

Excellent. The whole family loved it. I made some changes. I already had cooked shredded chicken, so instead of onion I used 1/2 tsp onion powder. Also, 1/2 tsp garlic powder. I left out the bread. Finally, I diced fresh carrots, boiled them for 6 minutes, and added frozen peas.

Mouse's Macaroni and Cheese

I've tried many mac and cheese recipes, and haven't liked any of them. This is by far the best. Perfect texture, great flavor. One thing: I wish I'd thought to put a cookie sheet under the casserole. It boiled over, made a mess of the oven, and smoked up the house.

Excellent! I made it without chicken, and it was great. Also, I used half the butter, whole milk instead of H&H, and thickened with a little cornstarch at the end.

Refried Beans Without the Refry

This was excellent. We usually make huge batches (8 pounds of dry beans) of refried beans and freeze them. They're good, but it makes a huge mess. This was easy, they came out very tasty, and no mess. Will definitely do this from now on.

Boston Baked Beans

Best baked beans I've ever tasted. This was my first attempt at making baked beans from scratch, and they came out perfect. Lots of calories, though. Next time I will make some low-sugar substitutions and see how they come out.

Colleen's Slow Cooker Jambalaya

Excellent! Everyone loved this. We had it with a choice of brown or white rice. For the leftovers, I cooked it down a little more to thicken it, and had it over whole wheat pasta. Also, the recipe itself is has just the right heat for everyone. Those of us who wanted it spicier just added tobasco .

Awesome Broccoli Casserole

I'm sorry, this recipe was awful. We had guests over, and nobody at the table enjoyed this recipe. There is way too much stuffing for the volume of the casserole, the tiny amount of cheese in the mixture adds nothing, and the large amount of cheese on top forms an impenetrable barrier as soon as it cools. The dish tastes like nothing more than frozen broccoli with sour cream on top.

Aunt Zula's Christmas Cutouts

It's true that this dough requires no chilling, which is nice. The cookies cut out very easily. And because they are not sweet themselves, they balance out very well with a sweet frosting. One problem: They are extremely dry! They were dry right out of the oven, and after only two days in a sealed container, they are completely crumbly. We'll keep searching for that holy grail of sugar cookies.

Best Egg Rolls

This recipe is excellent. We were a little concerned because some of the reviews said the egg rolls were bland. We made no modifications to it, and it was outstanding. Our guests were very impressed. We made an extra dozen and froze them.
