Catherine's Spicy Chicken Soup

This soup rocks!! Spicy, hearty and easy to make. Not for one on a sodium restricted diet- but not many soups are!! Great for a cold winter dinner! Makes alot, so invite some friends for soup.

Potato Salmon Patties

This is a family staple in our household. I subsitute dried minced onion instead of fresh to save time, and use celery seed instead of salt to reduce the sodium level. I also cook them on a non-stick skillet and don't have any problems with them sticking. Thanks so much for a new family favorite.

Broiled Tilapia Parmesan

I have made this many times and every time is as delicious as the previous. I have started using a no cholesterol butter substitute and low fat mayonaise and it does not affect the flavor or consistency. I also use celery seed instead of salt. I love this and it is the only Tilapia recipe I make. Thanks for the great recipe.

Black-Eyed Pea Gumbo

This was very simple, fast and DELICIOUS. I used the extra hot tomatoes and chilis and it had quite the kick. Topped it with a bit of sour cream. Rave reviews all around. I let it simmer longer than called for and had to add a bit of water. Definately a keeper and will be made again. Thanks so much!!

This was a wonderful recipe. Tasted just like a gyro sandwich, without the grease!! I doubled the recipe and made two rolls using my homeade pizza dough recipe. It was perfect. The tzatziki sauce is a must to accompany it.

Rainbow Cookies

Thank you so much for this recipe. It is so close to the bakery made when I was little in New York. The only change I made was using half milk and half semi sweet chocolate for the coating. I also doubled the amount of chocolate and coated the cookies on all sides before slicing. PS- you have to slice it before the chocolate is fully hardened. If you lightly oil or grease your knife, slicing is not as sticky.

Coffee Liqueur

The best recipe for kahlua I've tried. The coffee flavor comes out very bold and smooth. Much richer than store bought.
