Red Broccoli Salad

This was great! I took it to our Ladies Salad Supper at church around Christmas, and I made the amount that the recipe made. The lady in charge of it all got on the microphone after the dinner and said, "Whoever made the broccoli salad with the grapes and almonds - you will be bringing this again next year, and you will make about 3 times the amount!" Everyone applauded! It was gone before half of the people made it through the line! Many of the people that did get to eat it were asking for the recipe!

Penne with Spicy Vodka Tomato Cream Sauce

This was fabulous!!! I realized that I had no vodka, so I used 2T. of dry white wine. I let it simmer a little bit to cook off the winey smell, and it was great! Even my husband LOVED it, and he won't eat anything "creamy"!

Corn Casserole I

This recipe is wonderful!!!! After using it a few times I have made a couple minor changes. I drop the temp to 325 instead of 350 so it doesn't burn, and I fry a few slices of bacon, crumble them up pretty fine and add them. The smoky bacon flavor compliments the corn and green chilie flavor very nicely!

Very Berry Cheesecake

I didn't enjoy this very much. I'm not understanding why you would use cottage cheese in a cheesecake. I put it in the blender and had to add milk to it just to make it blend. Sour cream would have been much easier. Not to mention that the cottage cheese didn't cream very well and the cheesecake was kind of chunky. I'm not a big fan of chunky cheesecakes. Sour cream would help this recipe a whole lot.

Suzy's Mashed Red Potatoes

I thought this recipe looked a little blah to me, so I kicked it up a notch. I sauted some green onion and garlic like others had said, and I also added some rosemary. The rosemary gave it such a wonderful aroma and flavor! I made this to go along with Cranberry Pork Roast (also on this website). The gravy from the roast over the potatoes was fabulous! What a wonderful meal for the beginning of fall!

Party Pinwheels

I took these to a cookout a couple weeks ago, and talk about a hit! Even I was pretty impressed! I made a little change though. I put everything in the food processor, including 3/4 package of imitation crab meat. I thought it made the recipe go a little farther while still keeping it moist. I had no problems adding the entire package of ranch mix as other people have said. I didn't think it was too salty at all. I've already been asked to take these to the next cookout we're going to this weekend!

Hummus III

This is only the second time I have eaten hummus, and I thought that this was okay after a few changes. I went with the idea of only using 2 tbls. of tahini, and maybe I'm not used to the flavor, but I thought this was still too much for me. Next time I'll use 1 tbl. instead. I also used more garlic and lemon. My boyfriend never said anything, but I don't think he was very fond of this. I might make it again.

Scallops with White Wine Sauce I

These were great! I fixed this recipe for Valentines Day for my boyfriend with steak and asparagus, and he was very impressed. The sauce was so good that everything on the plate got dipped in it! One thing I will agree with is that it needs garlic. I also sprinkled my scallops with lemon pepper before broiling them - wonderful flavor. Also...I thought that a handful of parmesean cheese would be nice in the sauce, but not so. It came out lumpy and gross looking, so I remade it since it was so easy! I would definitely reccommend this dish!

Beer Cheese Dip II

This was wonderful! I took this to a party, and there were absolutely none leftover! I made a couple of changes to it though. I added quite a bit more garlic and some Italian seasoning, and instead of just mixing it all together, I melted it all together. Everyone loved it, and I will definitly make this again.
