Chinese Cookies
These were delicious. They received high marks from the whole family! I used butter instead of shortening and white wheat flour instead of cake flour. Impatient as I am, I just stuck the wrapped dough in the freezer for about 15 minutes and they were fine. I wasn't able to roll the dough into logs, though. It turned out more squarish so I had to reshape the dough after chilling. Also 1 roll was way too big, I rolled my dough into 2 "logs" and wrapped them separately. Overall, these cookies were a big success. I used the Quick Fudge Icing (from All-Recipes) and also sprinkled a little powdered sugar on the cookies prior to baking.No walnuts for me, but they were great without! The cookies kept well and the entire family enjoyed these immensely! Great recipe, I would definitely recommend trying it.

Quick Fudge Icing
Oh my word! This fudge frosting was absolutely mouthwatering! It was perfect for what I was making (Chinese cookies) and it tasted delicious. Like other reviewers advised, I cooked the mixture on Low until all the sugar was dissolved. As for my own changes, I added 1/4 cup of powdered sugar and decreased the white sugar to 3/4 cup. I think this may have given the frosting a slightly creamier taste. After taking the saucepan off heat, I whisked the frosting until it was cooled and my frosting came out thick and creamy, just like I wanted. I can see that, if you did not whisk as long, this recipe would also be great for a glaze. Wonderful recipe, thanks for sharing!

Pope's Valentine Cookies
These cookies were so good! The whole family loved them. As other reviewers said they were kinda bland, but as a simple valentines cookie they were great for us. To make them a little sweeter, I mixed red food coloring with sugar and generously sprinkled on top of the cookies, but icing would work well, too. If they are crumbly, just keep mixing! I thought mine were too dry, but after another minute or so of mixing (I used an electrical mixer) the dough was perfect for cut-out cookies. The confectioner's sugar is what really makes these cookies different from any others I have made. Thanks for a fast, easy, awesome recipe Jelly!
