Oven-Fried Catfish

I loved the preparation for this fish, but did find it lacking in flavor. I even added cayenne to the seasonsing, but it wasn't enough. I plan to try cajun seasoning next time. What I liked was that it did crisp up in the oven and the breading never falls off. Will definitely make again, but just need to get the season right.

Sweet and Spicy Stir Fry with Chicken and Broccoli

Very picky husband devoured this dish and even ate leftovers the next day (rarely happens). I tripled the sauce ingredients with the exception of the red pepper which I only doubled. I also added bell pepper for color and flavor. Be careful not to overcook the broccoli. The veggies should be firm. Served over 1/2 cup of brown rice. Will definitely make again.

Rosemary Turkey and Quinoa Meatloaf

DELISH!! I follwed the directions fairly closely except I added 1 TBS of rosemary to meat mixture, used only 1 TBS of brown sugar instead of 2 in the paste. Then cooked in 6 cupcake tins for 40 mins. Then popped them out, turned them over and cooked for 5 mins just to get ride of some of the moisutre. Will definitely make again. Way to go Drew!!

Delicious! I did not add any sugar or cranberries because I am following an clean eating diet plan. Guess what?? It had a sweet flavor without them! Maybe from the spicy brown or the apple cider?? Either way, this is going into my veggie rotation. Thanks for sharing!

Delicious! I did not add any sugar or cranberries because I am following an clean eating diet plan. Guess what?? It had a sweet flavor without them! I also used spicy brown mustard instead of Dijon. Honey Baked Chicken II

Really delicous dish. Small change I made was to cook the chicken covered with aluminum foil for the first 45 minutes then uncovered for the rest. It was a big hit for dinner with the whole family.

Grilled Asparagus

I made these tonight but added two ingredients - tbsp of diced garlic and tbsp of balsamic vinegar. Also, threaded with bamboo skewer as other's recommended and marinated for 30 mins in ziploc. Simple, awesome, delicous!! 100% Keeper!

Baked Salmon Fillets Dijon

This is so simple and so awesome. I used whole seed dijon mustard from Trader Joe's (added a little extra crunch) and used mustard panko crumbs from Whole Foods seafood department (even more crunch). Will make this many more times.

Slow Cooker Chicken Taco Soup

The seasonings were dead on in this recipe. I went with items I had on hand..8 boneless skinless chix thighs, Trader Joe's Fire Roasted Corn and Fire Roasted Diced Tomates with Chipotle Peppers. I also subbed the beer with chix broth. Be sure to use the taco seasoning the author included in HER review. I did not use nachos but served with home made cornbread. So delicous. Will try making with ground turkey and turkey sausage for an alternative.

Moroccan Lentil Soup

This was really good. I cooked the onions and garlic on top of the stove before throwing everything in to my slow cooker for 2 hours on high + 8 hours on low. I rounded all of my spoon measurements for alittle extra kick. At the last hour I poured half into my blender and returned it to the slow cooker to cook for the remainder of the time. When serving, I add 1-2 tbsp of raisins for a nice sweet taste.

Garlic Cheddar Chicken

This was enjoyed by all in my house (hubby, 8YO & 4YO) which says a lot. I used 1/4 butter and 1/4 c of OVO. Also used Italian seasoned bread crumbs. Really tasty.
