Chicken and Dumplings III

This was my first time attempting Chicken and Dumplings. This recipe was easy to follow and came out great! It has just the right amount of creaminess for me without being too rich. I followed someone's suggestion about making sure the dough batter was moist and sticky, so I had to add a splash more milk just to be on the safe side. I also added some carrots. We will be adding this to our list of regular meals!

Slow Cooker Latin Chicken

I used medium salsa and I should have followed the instructions and used hot salsa. To make up for the lack of spice, I added some chili powder. It turned out great! Goes well with brown rice. Next time I think we will try adding some corn. I also browned the chicken and then slow cooked it on the stove because I only had 2 hours until dinner time. We will be adding this to our regular rotation.

Low Carb Cauliflower Leek Soup

This is my favorite fall soup! I make it exactly as the recipe calls for, but I don't add the cream. It's a very forgiving recipe and super easy to make. Sometimes my carnivorous husband likes to sprinkle bacon crumbles on the top, but I prefer mine with a little extra pepper.

Baked Teriyaki Chicken

This recipe turned out great! I doubled the teriyaki sauce but only used 1/2 cup of white sugar and 1/4 cup of brown sugar. I purchased bone-in chicken thighs with skin because they were less expensive and took the skin off. I marinated the chicken overnight. I cooked it at 400 degrees for about 45 minutes with foil covering the pan. This made it more like hawaiian style shoyu chicken. It was so juicy and almost fell off the bone. Next time I will try to cook it covered with foil for the first half and remove the foil for the second half.
