Pork Chops with Raspberry Sauce

I really enjoyed this sauce! It was just yummy and homey and while I made it in the summer it would be perfect for fall.

Big Soft Ginger Cookies

These got snarfed down. They came out perfectly soft and chewy without feeling underbaked. I didn't have the margarine on hand so ended up using the salted butter I had. Left out the salt the recipe called for and it ended up fine. I also took another reviewer's advice and used orange juice in place of the water. I did not have any trouble working with the dough immediately.

Potato Rolls

I let these rise in my oven while using the "proof" feature and they were just so fluffy! Taste was great. Made these under a time crunch once, let them rise half the time both rounds, and they were still pretty good. Not quite as fluffy but still totally edible.

Chicken David

Made this for company recently, they loved it too. Mine didn't look nearly as pretty as the picture, it came out really sort of brown and not at all appealing looking but the flavor more than made up for the taste. Next time I make this I really need to plan ahead better so I can do everything in the right order and don't have to make other components wait. I did leave out the salami and just used prosciutto as I don't like salami. Plus I didn't feel it needed all that extra fat.

White Chocolate Blondies

I did make this with a white chocolate base and then stirred in butterscotch chips instead of chocolate chips. Also added maybe half a shot of butterschnapps to the recipe for flavor. They came out super moist and delicious and I got asked for the recipe!

Absolutely Perfect Palak Paneer

Soooo tasty. I definitely take it easy on the olive oil and sour cream. Tried not frying the paneer once, it was not the same. Of course, I get horrible oil splatter when I fry the cheese but such is the cost of tastiness. This recipe has become a go to for me. I usually eat it in two sittings.

Baked Mac and Cheese for One

Brilliant! I did skip the breadcrumbs, husband request, and felt like I didn't lose anything. Loved all the extra flavor from the sauces. Also used Gouda, I think, instead of cheddar, and mozzarella and it still melted just fine.

Rosemary Turkey Meatloaf

It's hardly fair to say i followed this recipe. I had to use 2 lbs of turkey because of the sizes the store sold and didn't want to have leftover raw turkey running around. Then, I threw in just a few baby carrots, well diced, just to sneak in a touch more veggie. Also didn't use straight breadcrumbs. I spread it between the crumbs, cornmeal, and quick oats that I cut up even further with a veggie chopper. Don't tell the husband, he didn't notice. Next time I might add celery, too. I would probably change the spice profile as this was nice but a smidge bland and flat. Something with a little heat would do better. But it was my first time making meatloaf. The overall texture was good and seemed well baked at 1 hour in my gas oven.

Lemon Lush

It's a very sweet lemon recipe as opposed to a tart one. It's got a great texture, though, very creamy and good for summer. I also used Pie Crust V instead of the one listed.

Greek Lemon Cake

I had to make mine in a 9x13 because I don't have a tube pan and it did fine. It came out super moist, partly because I added about 1/4 cup more yogurt, because I really like moist cakes. I also just put a bit of a glaze over it rather than frost - just heated some lemon juice and sugar up and poured it over. Friends and coworkers all loved it.
