Chicken Asparagus Roll-Ups

I was in a hurry, so I layered roasted deli chicken with the cheese and asparagus, and spread the sauce on top. Then I baked it until the sauce was hot and beginning to brown. It was a very good fast dinner. I'm sure the full recipe is delicious.

Banana Muffins II

Very simple and tasty. I made it the first time with butter and the bottoms were oily. I made it the second time with applesauce instead and I actually liked it better.

Baked French Fries I

Blueberry Crumb Bars

These were delicious. Like little blueberry crisp bars. Next time I will try adding more flour and liquid to give them a more cake-like texture and disperse the sugar (they were very sweet).

Ali's Amazing Bruschetta

This is the first time I've ever made bruschetta and I tried it at a dinner party. One of the guests compared it to restaurant quality! I put the chopped tomatoes in a strainer and pressed gently to reduce the liquid. Then I added garlic and capers with the other ingredients and lightly pre-toasted the bread as suggested by other reviewers. There were a couple left over and I heated them the next day at 350 for a few minutes and ate them for lunch--they were still delicious!

Almost Stuffed Peppers

This was just OK for me. I won't go out of my way to make it again. It is a good use of extra ground meat and rice and pantry items, makes alot, and is very filling.

Health Nut Blueberry Muffins

Just what I was looking for! A sweet and moist blueberry muffin without all of the guilt. I used fresh blueberries from the warehouse store. I did not have buttermilk, so I substituted half and half with a squeeze of lemon juice and lemon zest. I did not taste the banana, which I was worried about, and in fact, might try cutting the sugar back a little bit next time if both my banana and my blueberries are ripe and sweet. As an experiment, I added a spoonful of cream cheese and several raspberries to the center of a few. It was a real treat! Next time I will experiment with adding flax seed and other nuts for added texture and nutrition. Update: I could definately taste the bananas the second day and the muffins did not keep well.

House Fried Rice

Quite good, not as good as a restaurant, but also not as greasy. It went together faster than I expected. I used brown rice and chicken meat only based on personal preference. I feel like it was a pretty healthy meal this way. I look forward to eating the leftovers and to making it again with cold rice and a variety of spices and vegetables.

Spinach Enchiladas Verde

Good, quick, and easy. The first time I made this, I bought Mexican queso cheese for a special treat and I did not like it at all. It was gluey like American cheese. The second time I used Jack as called for and it was much better. Soften your tortilla in a pan with hot oil or in the microwave for a few seconds(my preference) before filling. For extra filling, I added mushrooms and onions, but wish I would have sauteed them first as they were still firm after baking.

Too Much Chocolate Cake

The only bad thing about this cake is waiting for it to cool! OK, I admit, that didn't stop me either! It smells wonderful baking and tastes even better. I made it as directed with mini chocolate chips and glazed with the chocolate glaze from this site. I garnished with chocolate curls. Don't stay home alone with this cake! Make sure you have someone to share it with--it will impress!

Eggplant Sandwiches

Excellent. The fresh basil is a must. I didn't have fresh eggplant so I substituted Trader Joe's frozen and breaded eggplant, which cooks in minutes. I can't wait to try it with fresh eggplant.

Key Lime Pie VII

Very good. I took the other reviewer's suggestion to squeeze the limes with a garlic press. It still took forever. And I couldn't get those little things to zest either. So I added a little extra juice. I wish I had taken the extra time to make a homemade crust as the store-bought one did not do justice to the homemade lime filling.
