Good, quick, and easy. The first time I made this, I bought Mexican queso cheese for a special treat and I did not like it at all. It was gluey like American cheese. The second time I used Jack as called for and it was much better. Soften your tortilla in a pan with hot oil or in the microwave for a few seconds(my preference) before filling. For extra filling, I added mushrooms and onions, but wish I would have sauteed them first as they were still firm after baking.
