Suki's Spinach and Feta Pasta
Really good recipe. Easy to make and impressive to serve. Just a few changes.. used minced roasted garlic (from the jar) and used 2 cloves. Also added chicken during the onion/garlic cooking process to add some extra protein for the diabetic in the family. I used canned petite diced tomatoes in their sauce (though next time I might only use 2 cups) because that's what I had on hand. I also used only 6oz feta because the container I was only that amount. But it was really a very tasty dish! Especially with some fresh french bread to soak up the sauce at the end :-)

Will definitely be making again :-) Thank you Doreen for posting! oh and BTW... this recipe only made for 2 servings in my

Chicken Pot Pie IX
Was totally awesome.. Slight changes as some recommended. Boiled meat and veggies in chicken broth. Cooked onion in butter till browned. Added some poultry seasoning to flour. Increased the gravy by 1/2. Cooked in a 2 cup Anchor Hocking bowl as an individual serving. This will become a favorite of ours! Perfect winter comfort food :-)
