Poppy Seed Cake

I used rice milk instead of almond, and orange extract instead of almond extract, 3/4 cup sugar instead of the original 1+1/2 cup. sugar. They where not very flavorful. And a little dry. I don't think I will make these very often- but they everyone ate them and smiled.

Chocolate Pudding

I just have to say- this was sooooo yummy! It is very forgiving, too! You can do rice or regular milk instead of almond, you can use almost any sweetener... so very good! I did increase the sugar slightly and added a bit more chocolate! I would and will make this again!

White Chocolate Macadamia Nut Cookies III

The best cookies ever! I do not like doughy cookies- AT ALL! These were slightly more cake-like, but not doughy. So, so, so good! I have to say, so many people have said, "use half butter half shortening" no way! Use all butter- but don't melt it all the way. Just until it is soft, and make sure to get salted butter! Then make the dough. And I personally love flat cookies, so I baked these right away. But if you wanted a thicker cookie you could put them in the freezer or fridge for a few minutes or hours. Also, these can freeze in a plastic container for about 2 weeks, so they are great cookies to make ahead of time! Oh, and the dough or the actual cookies can freeze. One more thing, shortening is not good for you one bit, and I am not saying that butter is, I am just saying- Butter Is Better! Anyhow, thanks for posting this Mary, your awesome! p.s. I liked them better with plain vanilla, not almond extract. And I used honey and xylitol in place of the sugar and brown sugar! Good Luck with these scrumptious cookies!

Mint-Chip Ice Cream Roll

Pugmire- i have a suggestion for you- don't let the cake stay in your towel too long. It can even be slightly warm (slightly).Another thing you can try- add 2-4 tbls. extra four or water- depending on if your cake was either too wet or too dry. you could also add 1/2 cup honey instead of the 1 up sugar and it would hold together better! Good luck, this cake is amazing!! Make homemade ice cream for even better favor!

White Chocolate, Chocolate Cookies

yummy! the only change i made was to add a teaspoon or so of vanilla... and i used plain chocolate chips instead of white for a most intense chocolate flavor! yum, yum, yum!!! (as always i subbed honey for both the white and brown sugar, half the amount) very very yummy!

MySweetCreations Peanut Butter Cookie Pie

I (and my family) never eat sugar, so I had to change this slightly. First- I used a healthy oreo- sweetened with evaporated cane juice (New-Mans-Own) for the crust. Then I powdered evaporated cane juice with some cornstarch in my blender and that worked fine- to substitute for the confectionery sugar. I made my own whipped cream out of heavy whipping cream, honey and vanilla. I made my own chocolate sauce- easy easy! And my own caramel sauce from honey, butter and milk. For the peanut butter cups I purchased some healthy ones, (also New-Mans-Own) And also made some chocolate covered peanuts to go on top. It tasted soooooo good! Thanks a million! (I forgot one more thing) I don't have a spring form pan. So, I took my pan and cut a piece parchment paper the same size, and placed it in the bottom. Then I baked it and froze it. Then I put parchment paper around the edges of the pan and did the filling and froze it. Carefully i mean CAREFULLY did i then removed the crust and filling by tipping it onto my hand. then I removed the parchment paper and placed it on a plate. Then I did the topping part. I was a little more tricky than a spring-form pan- but I am amazed at how well it worked!! Must try- EVERYONE MAKE THIS PIE!!

Best Chocolate Chip Cookies

coming from a chef who caters, loves to bake and is TOTALLY sugar free, these where yummo! I used 1 cup honey instead of the two cups sugar... soft chewy cookies, had a small resemblance to "chips ahoy!" must make!! :D

yumm... I love those thin chewy cookies, and this is just the kind i like! I substituted 2 cups of evaporated cane juice for the sugar, oh boy, these are so good!
