Yummy Artichoke Dip

This is really good and easy. I used low-fat mayo and didn't notice any difference in taste. I'm thinking I might used plain artichokes next time instead of marinated. I also might add some minced garlic. Just some ideas, but it's great as is. I sprinkled paprika on top for some needed color.

Sweet Potato Casserole II

Absolutely great! Tweak it if you want, but it's really wonderful as is. Ideas: adding autumn spices to the brown sugar mix, using heavy cream instead of milk, or using all brown sugar and no white sugar. But you really don't need to change a thing. One note: cool your sweet potatoes prior to adding the eggs. It is possible to slightly cook the eggs in super hot sweet potatoes, and that would not be good (think bits of scrambled eggs in your casserole--ick!).

Cream Cheese Frosting II

Outstanding. Excellent on carrot cake, and I'm sure it would be great on many other cakes, cookies, etc. I used a high grade vanilla extract, and I think that makes a difference in flavor.

Raspberry Topped Lemon Pie

The lemon custard is outstanding (and oh-so-simple)!!! We first tried the pie without any whipped topping, but my husband and I both felt that the raspberries were too tart. I made my own extra-sweet whipped cream (1 c. heavy whipping cream, 1 tsp. vanilla, 3 tbsp. confectioners' sugar) to balance the tartness from the raspberries. It's great like that. But be forewarned, it is too tart if you try to eat it without the whipped topping. If you want a pie without whipped topping, you could use the sweetened frozen raspberries instead of plain.

Best Chocolate Chip Cookies

This is a wondeful, basic chocolate chip cookie recipe. Perfect for the person who just wants a great chocolate chip cookie and nothing more. I used 2 1/2 c. (instead of just 2 c.) Ghirardeli semi-sweet chocolate chips and no nuts (personal preference). The recipe made 50 cookies using a cookie dough scooper, so the servings are right on target with this recipe. The cookies are soft and chewy in the center and crispy on the edges. Perfect!

Key Lime Cheesecake I

After 1 1/2 hours, this cheesecake was still liquidy and very wobbly when shaken. Of course, after 1 1/2 hours, the top was very browned even though I put foil over it. I followed the recipe completely, and my oven is usually hotter than others, so I have absolutely no idea why this would not set. Perhaps it is just supposed to be this way, because after I took it out, peeled off the burnt part, then refrigerated it over night, it was firm and cuttable. If this is the way it is supposed to work, maybe that part should have been included in the recipe. The flavor was very good, but I would recommend cutting down a to 1/2 c. of key lime juice unless you like your Key Lime Cheesecake very tart.

Asparagus Cashew Rice Pilaf

This was an EXCELLENT side dish! I am always in search of good side dishes to go with flavorful fish and chicken main dishes, and this is going to be a regular for me. JRW does not like asparagus, so I sauteed them in olive oil and garlic separately and ate them with my rice pilaf, while JRW ate his without. We paired it with grilled teriyaki tuna. Also, I had to use lightly salted cashews (the kind you snack on) rather than baking nuts, and it was just fine this way. Other changes: chicken broth rather than vegetable, orzo rather than spaghetti, halved the butter, and doubled the garlic. Great, great, great!

Apple Butter Pork Loin

I put everything plus a sliced apple in the crock pot on low for 8 hours. I then took the roast out and sliced it. I reduced the juices on the stovetop and added 1 tsp. of corn starch to make a gravy, which I served with mashed potatoes. Very yummy, and oh-so-easy with the crock pot.

Honey Lemon Tea

I started drinking this while I had laryngitis and the flu, but this week I'm all better and still craving it. I'm sippin' on some right now, as a matter of fact! All the ingredients can be altered to taste, so do your own thing with this one. I guarantee you can figure out a way to like it. Oh, by the way, my grandma used to make these with a shot of whiskey and call it a Hot Tottie.

Asian Chicken Noodle Salad

Awesome salad!!! But please, do not use the 2 tbsp. of butter to toast the nuts & noodles. It is completely unnecessary and simply adds fat and calories. If you have peanut oil, substitute it for the vegetable oil too. It has a more complementary flavor for this recipe. Also, this salad is really good without chicken as well. I served it as a side dish to roasted chicken instead of tossing the chicken in it. I used less of the dressing this way, which cut down on fat and calories too. Overall, great recipe!

Roast Chicken with Rosemary

This is a great starter recipe, but definitely listen to the other reviewers to kick it up a notch to a full 5-star rating. I rubbed the chicken with a good olive oil, minced garlic, and fresh lemon juice mixture. I also sprinkled the breast with kosher salt and fresh cracked black pepper. Furthermore, I added sliced garlic cloves to the cavity, in addition to the onion. Next time, I will add lemon wedges as well. I did use dried rosemary (all I had on hand), but I will use fresh next time. Because the flavor is not overpowering, this is a very versatile dish. The leftovers can be used in nearly anything. It is far better than any store-bought rotisserie chicken I have ever eaten and well worth the time investment.

Lemon-Orange Orange Roughy

Very good and so easy. My only suggestions to the recipe are to add salt to taste and provide measurements of the orange and lemon juice, as these vary greatly by the size and quality of the fruit. I used small fruits for my version, and it turned out just right for us. I made three different types of fish (perch, orange roughy, and tilapia) to see which I preferred. I thought the orange roughy was best by a mile, but the others would be fine in a pinch. My husband preferred the perch.

Guacamole

Excellent guacamole! I used dried cilantro, as my grocery store was out of fresh. I thought all the ingredients were perfectly proportioned, but the amount of onion you use should depend on personal preference and the strength of the onion. Also, finely mincing an onion (garlic or pepper) will make the flavor more pungent, so take care when chopping. Additionally, the cayenne pepper can be scaled to your preference or omitted entirely. I substituted it with 1 seeded and finely chopped jalapeno. I used the guacamole on chicken quesadillas, and dipped we tortilla chips in the leftovers. Great!

Four Cheese Macaroni

JRW gives it a 4-star; I give it a 3-star. Somehow, mine didn't turn out very creamy. The texture of the cheese sauce was a little odd, but I think it must have been chef error, not the recipe, as everyone else seems to love this one.
