Gail's Seven Layer Salad

This is a great salad as is, but I made several changes: used about half a bottle of light ranch with several squirts of Tapatio (Mexican brand) hot sauce, used one 6.75 oz. bag of Light Tostitos, omitted the red cabbage (personal pref), and used halved cherry tomatoes. Next time, in addition to these changes, I will use kidney or black beans instead of pinto, and I will double the avocado, cause I just didn't think there was enough of it. Also try sprinkling the avocado with fruit saver to prevent browning. This is a great potluck or summer bbq dish.

Bear's Picnic Veggie Dip

Wow! I love this stuff!!! I just made it, and I can't stop eating it. Great with veggies and with light tortilla chips too. My sister uses a similar recipe, but it has ranch dressing mix instead of veggie mix and 1/2 c. parmesan cheese. One could alternate for variety. Be sure to use light, low-fat, or fat-free sour cream and mayo to cut calories and fat though. There's no sense in ruining a perfectly healthy snack or appetizer with all that fat!

Southern Fried Cabbage

Great recipe, but I think it is better if you double the bacon and omit the vegetable oil. Next time, I also will take the suggestion of dipping out the bacon before adding the cabbage and onion, then adding the bacon back after the cabbage and onion have been fried. The bacon does get a little soggy if you keep it all in the pot together.

Tiramisu Layer Cake

It doesn't get any better than this! I've made it as a tri-layer cake and as a trifle. It is great both ways. Always beautiful and always well-received. It is totally worth the time and money! All I do differently is use 3/4 c. coffee mixed with 3 tbsp. of Kahlua for more moistness and flavor in the cake layers.

Cheesy Potato and Corn Chowder

Awesome! I never thought I would like "cheesy potato and corn chowder," (it sounds yucky to me), but it is truly incredible! I made it with Mexican cornbread, and it turned out great!

This definitely needs extra spices (mor garlic, basil, etc.)! Also, please sub the ground beef with Italian sausage. You will not regret it.

Dinah's Stuffed Mushrooms

These have been a hit with a crowd both times I made them. If you use small mushrooms, you can easily stuff 40-50 with the mixture. I like to use the clam juice from one can of clams for moisture and flavor. I also use all the butter and think it is splendid, even if it is incredibly fattening!

Chocolate Cappuccino Cheesecake

I hate to leave mediocre feedback when so many people have left five stars, but I must be honest. I didn't care for this dessert. I didn't think there was a strong enough chocolate flavor and my cake was overdone and grainy (I even used an oven thermometer). I just wasn't a big fan. Sort of disappointed after all the great reviews and expensive ingredients.

Ranch Dressing II

Good, but not great. This is not the consistency I was looking for. I'm trying to find a steakhouse ranch texture/consistency. This recipe has the same consistency as store-bought ranch to me. Flavor is good though.

Carrot Cake

This was good, but there are some serious changes that need to be made to rate it as five stars. First, you must add 2 tsp. of baking powder. Second, 1 1/2 c. of oil is too much, even for a southern cook. You could easily cut out 1/4 or 1/2 c. of oil and still have an incredibly moist cake. I cannot comment on the frosting, since I used cream cheese frosting II from this site instead. With these changes, this recipe is probably five stars. Tip: 1 lb. of carrots equals about 3 c. shredded. Also, I liked this as a layer cake. Next time, I will probably make three layers, rather than two.

Hush Puppies II

The recipe is okay as is, but I think there needs to be some changes before I'd call it a four or five star recipe. I'd do at least half cornmeal and half flour, add more onion, maybe a little chopped bell pepper, and perhaps some other seasonings, including extra salt. It's a good base recipe though. Thanks for sharing. I think with some work, it will be a five-star recipe.

Swedish Nuts II

Pistachio Fluff Fruit Salad

So easy, inexpensive, and yummy! This is a great dish for potlucks. I did NOT add bananas for personal taste and because I thought they might get old easy. I added one cup of chopped pecans. I loved it!!!
