Seriously SOOOOOO good!!! They took some time but they were definitely worth the wait! My husband kept saying that I should have just bought a can of them for .99 cents until he saw them. Then he said they were worth the time and effort! YUM!

Chicken and Dumplings IV

OH MY YUMMIES!!! First of all, I live in Texas and as I am writing this it is 100 degrees. However, we wanted some comfort food so I made this recipe! HOLY GOSH was it TERRIFIC!! As others, I did make some substitution: instead of water, I used 1 box of low sodium Chicken Broth, and half a box of chicken stock. I added to the broth 1 clove of chopped garlic, some celery, carrots, and a bit of onion powder (didn't have an onion) in addition to the salt and pepper. Then I added one can of the healthy cream of chicken soup before kicking it up to a boil to add the dumplings. After the dumplings were in, I mixed about 1 Tbsp. of cornstarch with some broth and added it to thicken. So wonderful and I highly recommend (even in the heat of the summer! just turn up your A/C and enjoy!)

Michelle's Famous Washed Cranberry Sauce

This is so DELISH! I used the amount of water called for in the recipe, but added a few scoops of frozen orange juice concentrate to the pot. I made this with Splenda granulated sugar and Splenda brown sugar and it turned out wonderfully! I have only tasted it from the cooled pot and love the flavor. I can't wait to see how it is with my Turkey dinner! My husband, who doesn't like cranberries, even said it was really good! I think this sauce would be terrific over a piece of angel food cake with whipped topping! :) Yumm! My only advice is to watch the pot! Mine bubbled over and made a huge, sticky mess- totally my fault!

Sauteed Garlic Asparagus

Okra Salad

I have had a variation of this with breaded okra. It is absolutely delicious and addicting! However, this un-breaded version is going to be better for you and just as good! I'm doing the low carb thing, and if I substitute splenda for the sugar, this is completely "legal"!

Chinese Cabbage Salad I

So simple and SO yummy! This is a great salad that everyone has just loved so far! Wonderful! Tip: don't mix the dressing in with the salad until right before you are going to eat it and eat it all at once, otherwise the noodles and nuts lose their "crunchiness"!
