Bean with Bacon Soup

So much better than canned! I added a couple of carrots and used 5 cups of water and 5 bouillion cubes. With the bacon and the bouillion it didn't need more salt, so I left that out. Used the whole pound of bacon, cut into bite sized pieces before cooking crisp. Set bacon aside to saute onion and celery (did not saute carrot.) UPDATE: have since made this healthier by lowering sodium and fat; see my custom version!

Slow Cooker Homemade Beans

So much better than canned! Used only 4 slices of bacon has that's all I had, and it was plenty. Also used half the salt, which I added towards the end with the ketchup because salt and tomatoes can keep beans from softening. Also increased water to 2 cups to make sure beans were covered in crockpot. Before placing in crock, I used this method to reduce gas: place beans in 6 cups cold water and nothing else, bring to a boil and boil ten minutes. Remove pot to sink, do NOT drain, add 1/4 baking soda and stir like crazy until all foam is gone. Rinse beans well, then place in crock and continue as directed. Left on low overnight.

Stuffed Green Pepper

I love stuffed peppers the way my grandmother used to make them, and this is as close to hers as I have found. I used canned diced tomatoes with basil, oregano, and garlic instead of fresh, and omitted the celery. Topped with grated cheese before serving with crusty french bread and sliced cantaloupe for a great summer dinner!

Herbed Potato Soup

I don't know why everybody raves so much over this soup. It was just OK. Maybe a little too much herbs. After the first bowl I added a cup of grated Parmesan cheese, and though that improved the soups a great deal. Still, I do not think I would make this again.

Skillet Pork Chops with Potatoes and Onion

I did tweek this recipe a bit to make it similar to an oven baked pork chop recipe I sometimes use. I added 2 tsp. rubbed sage to the flour, along with salt & pepper to taste. I did NOT add salt to the cheese, it's salty enough! I also used only 2 builion cubes - one beef and one chicken. After browning the chops I sprinkled them with a little lemon zest, then the cheese. I used 4 potatoes and one large onion, layering as stated. It turned out great, very flavorful and easy.

Easy Slow Cooker Chicken

Here's how my family has always done it: can of cream of chicken, can of cream of mushroom, packet of dry onion soup mix, 2 cups of water, 1 cup of rice, 4 boneless breasts cut into strips, salt and pepper to taste. Mix the soups, water, and rice in the crock pot. Salt and pepper the chicken, then brown it in a little oil. Put the chicken in the crock pot; cook on low 4-5 hours. Serve with a fresh garden salad for a great keep the house cool summer meal.

Easy and Delicious Chicken and Rice Casserole

We've been making this for many years - a childhood comfort food favorite. But we always made it with bone-in, skniless chicken pieces when I was a child. I made it with boneless breasts once, and the chicken came out dry. If I were going to use boneless again I would cut it in strips or chunks and pan sear it first. Sometimes I make it as is, sometimes I dump in some frozen veggies. Sometimes I add garlic and/or other herbs. This is a great base recipe to experiment with!
