Mom's Country Gravy

Boy was this thick! I'd always heard a basic ratio of 1 part oil to one part flour when making a roux, so I was hesitant but went with the 3/4 cup flour. Next time I will reduce the amount of flour. I took the advice of several reviewers and used bacon grease. The taste was good. Some people had said there was a strong taste of flour; that happens if you do not cook the flour long enough before adding the milk.

Roasted Brussels Sprouts with Cranberries

I made this with frozen and thawed Brussels sprouts, and that may have been a mistake. I think it would have been better with fresh because these turned out mushy. But the taste was very good, and I want to make again with fresh brussels sprouts.

Sweet Mustard Chicken Bake

I cut the butter in half as suggested by other reviewers. It tasted good, but the sauce seemed thin. Next time I think I would add a little cornstarch to get it to thicken and glaze better.

Slow Cooker Chicken Stroganoff

Wow, this really works in the slow cooker! I've been making this same thing for years, but by tossing cut up chicken with dressing mix to coat, brown it in tbsp. butter and tbsp. olive oil in skillet, meanwhile heat cream cheese and soup in microwave until cream cheese melts, stir to combine, and then add cooked chicken to sauce. So I had some doubts about it turning out as well with the slow cooker method, but it worked great! The chicken pieces did brown a little, and I used 2 tbsp. butter not margarine.

Green Beans with Cherry Tomatoes

Just OK as written, with a change from garlic salt to 2 cloves minced garlic (sautéed in the butter first) and 1/2 tsp. salt. If I make this again I would double the basil and reduce the sugar.

Cheesy Beef Noodle Casserole

Worked great with Tinkyada Brown Rice Spirals with Rice Bran to make it gluten free. These noodles cooked perfectly as directed. The only diced tomatoes I had were Rotel mild with green chilies, which gave it a nice little kick.

Pepper-Crusted Beef Tenderloin with Chocolate-Port Sauce

The sauce was good, not sweet with a ruby port and 72% cacao chocolate. Be sure to use a quality balsamic vinegar. Taking the extra time to caramelize the shallot is worth it.

Honey Roasted Red Potatoes

Wonderful! The only thing I did differently was to slice a small onion and break it into rings rather than using the diced onion called for. My guest and I both felt that the onion made the dish.

My family has been making a similar dish for years. We use bone-in, skin on thighs and legs, carrots cut into 1 in. pieces as well as potatoes, and thyme instead of oregano.

Bean with Bacon Soup

So much better than canned! I added a couple of carrots and used 5 cups of water and 5 bouillion cubes. With the bacon and the bouillion it didn't need more salt, so I left that out. Used the whole pound of bacon, cut into bite sized pieces before cooking crisp. Set bacon aside to saute onion and celery (did not saute carrot.) UPDATE: have since made this healthier by lowering sodium and fat; see my custom version!
