About this Cook
When I was young, I was diagnosed with a medical condition that forced my parents to keep me from being too active, so in self-defence, my mother taught me to cook at a very young age (learning to cook + low-activity lifestyle; not a good combination for the long-term!). That interest in the preparation of food started me on a life-long interest in cooking, and as a young adult, my step-mother fostered that interest even more, in that she was very adventerous and seldom made the same dish twice (at least not the same way twice, much to my father's consternation at times!).I love to try new things, and make them my own!
My favorite things to cook
Mediterranean, Tex-Mex, Indian, and Asian are my favorite kinds of food to make, along with a good old meatloaf or burger now and then. I also like to bake, but any more, I usually only bake for special occasions. Because of my life-long weight issues due to my health issues as a young child, and more recently because my husband had a heart attack, I try to make things as healthy as I can without losing too much of the essence of the original dish. Sometimes what results is a winner, other times, not so much!
My favorite family cooking traditions
Probably the number one tradition we have is to grill as much of our food as possible. When you seldom make the same thing the same way more than once, it is hard to develop traditions! Thank goodness my husband is just as adventurous as I am when it comes to food, and our poor son never had a chance to be otherwise!

Bourbon Pecan Shortbread
We enjoyed these very much. We really couldn't actually taste the bourbon - it just leant the shortbread a different, subtle taste. In fact, my husband asked me to increase the bourbon just slightly so that there is just the hint of bourbon taste. I am thinking I will add another tsp, and just keep tinkering to get this to our liking (not that it isn't good as is - thus, the 5 stars!). Using different liquors would provide almost endless possibilities. Thanks -

Spiced Pickled Beets
Delish! Our family loves beet salad, so I am always on the look-out for new recipes to give us a bit of variety. This recipe was pretty close to what I have used for years, but the addition of the spices added just that special "something". I used fresh, roasted beets, and I added a small cinnamon stick, as suggested by another reviewer, but otherwise kept to the recipe. This is a keeper, for sure!

Slow Cooker Chicken Stroganoff
The ONLY reason I am rating this as a 4 is that I found that 5-6 hours on low for the cubed chicken was way too long. I added the soup and cream cheese after 4 hours, and then kept it on warm for an hour until everything else was ready, and it was just fine. I was prepared to add sour cream to give it that "stroganoff" flavor, but when I tasted the sauce at the end, I was amazed at how much like a stroganoff sauce it tasted, so I nixed the sour cream (yeah - fewer calories!). This is a definite keeper in our house. Thank you Judi Ann.
