No Bake Cookies I

Had a craving for chocolate but none in the house, then realized I probably had all the ingredients for no-bakes, but hadn't made them since high school home ec class (15+ years ago!) I didn't have enough peanut butter so I halved the recipe and it turned out great - just a little crumbly. I spread them in a pan instead of dropping them on wax paper and they sliced up perfect. :)

Very Easy Risotto

I tweaked this recipe and it turned out AMAZING!! I made it with 2 cups of arborio, added garlic powder before liquid, added 2 boullion cubes to 2 cups of water, cooked for 7 min, then used 2 cups skim milk for the rest of the liquid. Added grated parm with the milk (didn't have any fresh) and shredded mozzarella just before serving. Sooooo good!!

Easy Pumpkin Muffins

I was looking for a quick, simple dessert to make with the few random ingredienta I happened to have in the house, and this was perfect! Based on the other reviews, I added one egg, 1/4 cup of oil, and a generous dose of apple pie spice to taste. I then folded in a few handfuls of toasted almond slivers, butterscotch chips, and dried cranberries. The recipe made 14 large muffins that puffed nicely on top (which I aprinkled with sugar and cinnamon before baking) and were very moist. It took 32 minutes for them to cook all the way through, but the wait was worth it - my family loves these and I will definitely make them again!

Scottish Shortbread II

This recipe is VERY simple, but the finished product just isn't that great. This shortbread has a very floury, heavy taste and texture. It was crumbly and tasted pretty good when fresh from the oven, though. (Of course, it should be noted that even though I didn't like this recipe all that well, I still managed to eat 2/3 of the pan all by myself over the course of a few days!) Bottom line: Edible, not incredible.

Baked Potato Soup I

This soup was *SO* bland, and took *SO* long to make. I agree wholeheartedly with the poster below - because the flour is not browned in this recipe, it was the only thing I could taste. This actually tastes exactly like my mother-in-law's bacon gravy, which has NO flavor whatsoever. I will definitely not be making this again!

Six Can Chicken Tortilla Soup

WOW! This is the most DELICIOUS thing I have ever made. I used one 9-oz. package of frozen grilled chicken strips in place of the canned chicken, and added 1/8 cup each of fresh cilantro and green onions, with a pinch of garlic and taco seasoning to taste. It was VERY spicy when first cooked, but by the second day in the fridge the flavors had really blended together. A dollop of sour cream cools it down nicely. I can't wait to cook this again - it was SO easy, and really yummy!
