Yummy Sweet Potato Casserole

This is delicious and easy to make. I ended up baking peeled yams in foil and dumping that in the mixer bowl. Couldn't be simpler and everyone loved it.

Cabbage Fat-Burning Soup

This make a HUGE pot of soup! It is delicious and I wish mine had more cabbage in it - the biggest head I could find was still on the small side. I used fresh green beans and doubled the beef broth, added Worcestershire sauce, black pepper, hot sauce and pepper flakes - I like flavor. I made another pot and changed the veggies slightly to include cauliflower which I had on hand and saved a copy on here. I add turkey meatballs for meal replacements. This will be my new winter work lunch, it will allow me to save money and lose weight, win-win! If you decide to change the vegetables around and want to preserve the weight loss property, be very aware to avoid any starchy vegetables and limit vegetables that are high in sugar. I cooked mine about an hour, anymore than that and veggies will be too soft as they keep cooking until they cool and may cook a bit again when you warm up the soup.

Very Moist Golden Rum Cake

This was perfect for New Year's party! Easy to make with the cake mix and pudding, and yet different. I will make this again however I will experiment with coconut or pecans, the walnuts were a little bitter to my taste.

Guinness® Meaty Chili

Tried it as close to instructions as possible and decided to tailor to our taste on the second batch. I added 1.5 lbs of meat, and seasoned it with Montreal Steak spice and Worcestershire sauce at least an hour before browning it. I cut half a pound of bacon in squares and cooked in a large sauce pan, removed the bacon and saved about 30ml of fat in the pan instead of the vegetable oil and cooked the rest of the meat in the same pan. Once the small sirloin cubes were browned and ground meat, garlic and onions were cooked, I dumped it all in a crock pot for a nice long 8hrs of slow cooking, we ate the next day for a deeper flavor. I used a Guinness, espresso beans to make the coffee, 2 habaneros for the peppers, wishing I would have had some chipotles on hand. Only one can of beans is enough for us. What you get is that sweet meaty chili and then the heat builds up. Heat lovers will want more fire.

Chili I

Waffles II

Delicious basic waffles recipe, not bitter or anything. I tried it as-is to find out what I was dealing with. Make sure to spray your waffle iron even if it is non-stick. For the subsequent waffles I added half a cup of sugar and bit of vanilla. I served with cut fruits: mango, pineapple and bananas (shredded coconut is also delicious with this combination). A sprinkle of powder sugar and maple syrup helps crown this beautiful treat.

Mom's Sushi Rice

I did not have any konbu dried kelp however I decided to give it a try anyway. This recipe is great except that to our taste it had too much vinegar. Otherwise, the rice came out perfect.

Golden Pork Chops

For a quick fix, not many ingredients recipe, this was perfect! I didn't even have fresh mushrooms and used a can instead. I browned the chops in the pan quickly, it saved me 20 minutes in the oven. I even had a surprise guest that night -hubby's coworker I never met!- and he cleaned his plate! I was really relieved. I would use maybe a little more seasoning next time, or brown the onions too, but this was otherwise perfect for a quick, effortless fix. I will make it again.
