Superfast Asparagus

Reviewed: Apr. 15, 2010
Tasty and fast! I accidentally over cooked it a bit - but it was still yummy. I brushed it with a little melted butter and added a sprinkle of garlic salt. Definitely will be making it again!

Charlotte's Tortellini Soup

Reviewed: Feb. 6, 2008
Charlotte - I don't hand out 5 stars very easily here.... but this is 5 stars plus. I am making this again right now... I've been making it for years and it's a favorite in my family and my friends love it, too. I can't believe I haven't rated it yet and that there is no pic submitted of it. I will take one tonight. For you doubters - ADD THE KETCHUP!! You wont regret it and it really is key to this recipe along with the wine. This is a perfect soup and soups are my favorite thing to cook. Thank you so much for this recipe... I love it! Everyone loves it! OM NOM NOM!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Jul. 1, 2007
This was excellent.. the hit of the picnic! Here's what I did differently - I used 1 Fuji apple (rubbed with lemon juice so it wouldnt brown) 1 pear, 1 peach, 1 nectarine, 2 kiwi, about a half cup of pineapple, 1 pint each of strawberries and blueberries... all fresh. I added NO sugar, and used 2 teaspoons of raspberry preserves. I diced the strawberries, kiwi, and pineapple the night before.. keeping them in separate containers, of course. I did not use a food chopper if you dice the fruit by hand it will help to avoid a mushy salsa. I made the chips the night before, to save time. For the chips - i used 2 bags of 10 inch tortillas. From that I got 2 big Hefty Zip Lock bags full. I did the butter cooking spray and cinnamon sugar on each side, and cut them with a pizza cutter. I did some flat on a cookie sheet, and some in mini muffin pans.. the cookie sheets are the way to go if you wanna save on time - the muffin pan chips were fun for the scoopable effect. I baked them at 350 for about 10 minutes and then let them cool on the hot cookie sheet which left them with a nice crispness. The chips were a HUGE hit. Everyone raved about them. Yes - this recipe is time consuming. Be prepared for that from the start. It is worth the effort. My father-in-law even asked me for the recipe. He has NEVER asked me for a recipe in 15 years. This recipe is that good. He wasnt the only one - everyone wanted details. It is definitely a keeper... and will become a July 4th staple at our picnics.

Eileen's Meatloaf

Reviewed: Mar. 15, 2007
I cannot believe I havent reviewed this one yet. This one I've been making since I found this site a long time ago. It made a believer out of my husband, who hates meatloaf... except for THIS meatloaf. It's a staple in my recipe box. So easy, always good. I serve it with brown gravy and mashed potatoes and a vegetable. Yum. I do change one thing - I only use half of the envelope of onion soup mix, otherwise it's too salty for me. Thanks for a great recipe. There is no other way I make meatloaf now.

Salsa Chicken

Reviewed: Feb. 8, 2007
Giving 5 stars is SO rare for me. I give this 5 stars over all. It was SO easy, and very yummy. My husband loved it, too. I used 4 ginormous chicken breasts... and a whole packet of taco seasoning on both sides. I used a mix of Chi Chi's & Newmans own salsas and LOADED it with cheese. I served it as follows - I spread a layer of refried beans over the bottom of the plates... placed the chicken on the beans, surrounded the beans in a circle of spanish rice, topped with a dollop of sour cream and spooned a little salsa on top of the sour cream. It was very pretty, and so yummy. Clean up and prep time were minimal. Fantastic quick & easy meal. Thank you!

Daddy's Sausage and Peppers

Reviewed: Nov. 23, 2006
I am not quick to hand out 5 star reviews on this site.... but this one is deserving. This recipe is delicious... and very versatile. You can do many things with this one recipe.... as it stands alone, over pasta, on pizza, in calzone, as a sandwich... it's simple and delicious. I worked in an italian restaurant for a LONG time, this is a restaurant quality meal. My husband and I both loved it. Thank so much.

Awesome Broccoli-Cheese Casserole

Reviewed: Nov. 25, 2004
I've made this a few times. I made it for 2 separate Thanksgiving dinners, everyone raved. Simple, and yummy. I add a small container of sour cream, and use seasoned salt, pepper, garlic salt & broccoli florets. I also top the casserole with more of the shredded cheddar & crushed crackers. Another keeper. Thanks Stacy. =)

Cajun Chicken Pasta

Reviewed: Nov. 16, 2004
Excellent. Using 3 large chicken breasts, I doubled the cajun seasoning, grated cheese, and lemon pepper. I used 4 green onions and a whole red pepper, not half. I used a whole box of angel hair instead of linguini, and increased the heavy cream to 2 cups. I sauteed all the seasonings along with some fresh garlic right in with the chicken, and added the grated cheese in with the heavy cream. All other measurments I left as stated. Very good recipe. It's a keeper.

Taco Seasoning I

Added garlic salt, hot sauce and a few tablespoons of salsa. No need to add corn starch or flour, just let it simmer down. Very good. Definitely going to replace the store bought envelope mixes for this girl.

Burrito Pie

Reviewed: Jan. 16, 2003
This recipe ROCKS! Definitely top 10. I make it at least twice a month & everyone loves it. I've passed the recipe on to quite a few people as well, and they love it! I only make a couple of minor changes, it's excellent as is.... but I add some jalapenos to turn up the heat & I also use a jar of salsa instead of taco sauce. I use refried beans with chiles, and I season my beef with 1 envelope of taco seasoning, but I dont add water. Thanks for a great dinner, and thanks for all the compliments!

Slovak Stuffed Cabbage

Reviewed: Apr. 9, 2003
This recipe is really very good. My husband loved them, so did my neighbors, and so did I. I changed very little. The only thing I changed was the amount of water I used to fill, I kept & used the liquid from the diced tomatoes so I only used 1 cup of water to fill, (and i used the water I cooked the cabbage in) and quite frankly next time, I'll leave it out completely, you dont really need it - especially if you like a thicker sauce. I also used a little extra brown rice. I cooked them for 2 hours. However there were 2 things I was confused about... 1. should you cook the bacon first? I didnt. 2. should you cover before cooking? i did. In any case, thanks Kelly for a great recipe. It's a no brainer, & it isnt THAT time consuming. My husbands Mom is Slovak & makes the best cabbage rolls I've ever had, these are a very close second. I'll be making them again, this ones a keeper. Thanks again. =)

Amy's Garlic Egg Chicken

Reviewed: Jan. 16, 2003
This recipe ROCKS! Make it tonight! I didn't change a thing, & it was perfect. I thought it called for a bit too much garlic between the cloves & the powder, but I gave Amy the benefit of the doubt & she was right on the nose. It wasn't over bearing at all. The chicken was tender, juicy & loaded with flavor... and it was SO easy to prepare. I served it with a side of pasta primavera, & it was a hit. Thanks so much, Amy. This one is definitely a keeper!

Pesto Chicken Penne Casserole

Reviewed: Nov. 15, 2011
I don't even have this in the oven yet and I'm giving it 5 stars. Have you ever seen 'What About Bob'? The scene where he is having dinner with his doctor and the doctor's family - that was me preparing this. SO GOOD. Tweaks - I halved the pesto, used diced tomatoes, omitted the spinach (didn't have any) & seasoned the chicken a bit. I did it all in one pan on the stove top with the exception of the bread crumb mixture, obviously. Poured it in the 9x13 pan, topped with the crumb mixture & popped it in the oven. It smells divine, too. Can't wait to get my eat on. This is not at all healthy - but outstanding. Thank you so much.
