Taco Seasoning I

Reviewed: May 20, 2012
Added garlic salt, hot sauce and a few tablespoons of salsa. No need to add corn starch or flour, just let it simmer down. Very good. Definitely going to replace the store bought envelope mixes for this girl.

Garlic Cheddar Chicken

Reviewed: Mar. 26, 2012
5 stars after my tweaks. I used basil, not oregano. Extra garlic (fresh!) Added a few more seasonings to the bread crumbs. Didn't pound out the breasts, just cooked them at 400 for 40 minutes & flipped half way through cooking. A definite keeper. Thanks!

Pesto Chicken

Reviewed: Nov. 22, 2011
This was just ok for me. Hubby liked it more than I did. It was a good start - but next time I make it I'll definitely be doing some tweaking. Fast and easy - just lacking something...

Pesto Chicken Penne Casserole

Reviewed: Nov. 15, 2011
I don't even have this in the oven yet and I'm giving it 5 stars. Have you ever seen 'What About Bob'? The scene where he is having dinner with his doctor and the doctor's family - that was me preparing this. SO GOOD. Tweaks - I halved the pesto, used diced tomatoes, omitted the spinach (didn't have any) & seasoned the chicken a bit. I did it all in one pan on the stove top with the exception of the bread crumb mixture, obviously. Poured it in the 9x13 pan, topped with the crumb mixture & popped it in the oven. It smells divine, too. Can't wait to get my eat on. This is not at all healthy - but outstanding. Thank you so much.

Shrimp Lemon Pepper Linguini

Reviewed: Aug. 11, 2011
not at all impressed. bland (except for the flavor of lemon & chicken broth) and boring. reminded me of avgolemno - and it wasn't soup that I wanted to be reminded of. really expected a lot more from this recipe because of the reviews. apparently this site has a lot of users that are *really* easily pleased.

Cajun Chicken

Reviewed: Jun. 2, 2011
4 stars after tweaking. easy. fast. i used cajun seasoning & lemon pepper both with no salt. i used garlic salt, not garlic powder. i reduced oil to 1 cup & used 4 breasts. i kept the spice measures the same - We like spicy. I added black pepper to the marinade. Marinated for 40 minutes. Ran out of propane right as I was going to put them on the grill - so I fried them (oil & all) in a pre-heated cast iron skillet. They were outstanding. Moist, tender, juicy & delicious. Thanks!

Superfast Asparagus

Reviewed: Apr. 15, 2010
Tasty and fast! I accidentally over cooked it a bit - but it was still yummy. I brushed it with a little melted butter and added a sprinkle of garlic salt. Definitely will be making it again!

Famous Butter Chicken

Reviewed: Jan. 21, 2010
Not exactly 5 star but it was very easy and tasty. The chicken was VERY moist, but not as crispy as I had hoped. Next time, less butter and maybe some more spices into the cracker mixture. Flipped it half way through. Hubby liked it a lot. Thanks for a great recipe. :)

Lemon Pepper Chicken and Gravy

Reviewed: Jan. 17, 2010
4 stars - but I did change things up a bit. Added additional seasonings to the chicken, sauteed some onion in also - served over egg noodles. Easy and tasty. Thanks.

Best-Ever Texas Caviar

Reviewed: Dec. 25, 2009
Made this for a family party - it was ok. Everyone liked it - but it didn't get rave reviews. I added some spices and tomato because i thought it to be a bit bland - and even after that I still found it to be a bit bland. Will I make it again? Maybe - but it definitely needs tweaked.

Boilermaker Tailgate Chili

Reviewed: Nov. 1, 2009
After cooking this for 3 days - it's 5 star. The first day - it was ok, kind of thin - 2nd day - tastier and a little thicker - by the third day it is amazing! Thick, hearty and VERY tasty - although I think it could have been a bit spicier. I made it for a Halloween party (I started cooking it 2 days before) and did a little chili buffet - set out some bowls and a platter of sour cream, fresh chives, cheese, and a plate of hotdogs - people could have what they preferred - but no matter what they chose they really enjoyed this chili - and so did I. I left out one can of beans and added a little extra meat and i used real bacon - other than that I followed the recipe exactly. I will definitely be making this again. Thank you. :)

Piggy Wiggys

Reviewed: Nov. 1, 2009
Quick, easy - and one of the hits of my Halloween party. I should have made a double batch. I served them with honey mustard for dipping - and I used lil cheddar smokies. These were tasty and fun. Thanks for the recipe!

Artichoke and Roasted Red Pepper Dip

Reviewed: Nov. 1, 2009
This was just ok for me. Kind of bland - so I added garlic and pepper. It was pretty greasy - even after patting down the peppers and hearts with paper towels. I made it for a Halloween party and it was one of the few things leftover. I doubt it will go into my regular rotation - but maybe with some tweaking it could be better.

Mini Ham And Cheese Rolls

Reviewed: Nov. 1, 2009
These were tasty - I added some pepperoni, roasted red peppers and fresh spinach leaves to the sandwiches - and I used provolone cheese. I also added garlic to the butter mix. Made 2 dozen for a Halloween party and they were gone in a flash! Thanks for the great start - the changes I threw in made these even better!

Hash Brown Casserole II

Reviewed: Apr. 12, 2009
Good stuff. Everyone gobbled it up for Easter dinner. I used cream of celery, added diced red peppers and instead of corn flakes i did the french fried onions on top... baked it for an hour as 40 minutes didn't seem to be enough. I'll be making this one again, for sure. Thanks for sharing!

Burgundy Pork Tenderloin

Reviewed: Jan. 22, 2009
I was going to give this 2 stars - but I'm sorry... it's not that good. I don't get all of the rave reviews. I followed the recipe. The cooking time is WAY off. 45 minutes is not long enough. The pork not that flavorful. The sauce was ridiculously salty. I guess people are far too generous with the stars on this site. This is not a 5 star meal by any means. Hubby said it was 'ok'. I said PASS.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Oct. 24, 2008
This was 4 stars after my tweaking. I used 2 cans of undrained diced tomatoes, lots of garlic, basil and parmesan, a chopped red pepper and instead of crumbling the sausage i cut it into bite sized links. This gave the dish a much nicer presentation. Served with a nice salad and garlic bread, it was yummy. Thanks for a good start! I will be definitely be making this again.

Slow Cooker London Broil

Reviewed: Oct. 22, 2008
I dont understand the hype over this recipe. It's just NOT that good. I even spiced it up a little with some seasonings, worcestershire and onion. The london broil turned into roast beef... a very DRY roast beef. How can beef become so dry when it's sitting in 3 cans of soup? (Yes, I used an extra can.) It was also WAAAAY too salty. 2 stars for the easy factor - taste wise it was 1 star. I'll try any recipe once, but this will not be making it into my rotation. Thanks anyway, tho'!

Chicken Enchiladas with Creamy Green Chile Sauce

Reviewed: Sep. 17, 2008
Very good. I doubled the sauce and added jalapenos, garlic and black pepper to it. I seasoned the chicken and added spanish rice, and red peppers to the filling. I used flour tortillas. I did not fry them.... just popped them in the microwave for a few seconds between damp paper towels. Great as a starter recipe and excellent after being tweaked to our preferences. Hubby loved them.. it was his b-day dinner. Thanks so much!
