Baked Dijon Salmon

My boyfriend and I both loved this recipe. I made it with fresh Sockeye Salmon with the skins on. I didn't have pecans so I used almonds that I had on hand. I had errands to run so I prepared these ahead of time and let them marinade in the fridge for a couple of hours before actually baking them. Fish is one of those foods I have to make myself eat because I'm just not a big fish person BUT this was really delicious!!! My boyfriend even said, "Dinner was exceptional!"

Jamie's Cranberry Spinach Salad

This salad is sooooo good!! Easy and most of all delicious!! It's good with or without added cheese. The dressing is wonderfully flavorful and I love the toasted almonds. I made this for Christmas dinner and it was a huge hit! My boyfriend absolutely loves it and asked me to make some of the dressing to keep on hand for other salads we have. I also used olive oil instead of vegetable oil. I would like to try making this with Splenda sometime as a healthier alternative.

Chocolate Mocha Cake I

Excellent!! I made this for my boyfriend who loves chocolate and coffee more than anything. He flipped over this cake! Was sooo moist, topped with chocolate mocha frosting from a different recipe. used one third cup strong coffee instead of the instant and it had a great flavor! The frosting recipe I used is also from allrecipes. And again, I substituted strong coffee I stead of the instant! My boyfriend and our guests ate it all up in one night, asking for seconds. Soo good. Will be making this again soon!

Green Grape Salad

Yummy!!! I used Splenda instead of sugar,Greek yogurt instead of sour cream, fat free cream cheese and walnuts and didn't miss all the sugar or the fat. Sooooo good!

Monkey Bread

The first time I made this, I did not have a bundt pan, so I made a small batch in a casserole dish. It turned out so delicious. It was so good, I went the next day and bought a bundt pan so I could make some for my in laws. It did not cook all the way through. The top was hard, and the pieces underneath did not cook all the way. I wound up throwing most of it out. If anyone has a secret on how to get it cooked all the way through, please let me know. I would love to make it again in a bigger batch.

Spanish Flan

The first time I made this, I did not have the proper pan, so I made it in a tin pie plate. I used 5 eggs and like another reviewer had stated, it was too much like scrambled egg texture, but had a great taste. The second time I made it, I used the exact recipe in the correct pan, and it spilled out all over the bottom of my oven and made a horrible mess that smelled up the whole house. It was unedible. I would like to try it again, next time in the water bath once I got all the burnt pieces scraped out. There has to be a simpler way. :(

Delicious Ham and Potato Soup

Delicious!! This was the most filling soup I have ever made. One bowl was very satisfying. I bought ham that was already cubed to save time. Be careful not to overcook the potatoes, I made this mistake. The soup was superb, but the next day, my potatoes were the consistency of mashed potatoes. It was still all eaten and still delicious, but I will know better next time to not overcook them.

Hummus III

Spectacular!! I made this for the first time last night for a World Series party and it was a smash!! I made mine like this: I used two CANS of garbanzo beans, 1/4 cup fresh lemon juice, 3 cloves garlic, dash of salt to taste, and approx. 1/3 cup sweet red peppers from a jar. I didn't have any parsley or paprika. I used approximately 2-2.5 Tbsp olive oil. I saved the liquid from the beans and added some back to get the consistency I wanted. I put it all in a blender until smooth and it came out so perfect. I served it with some Cuban bread slices and some baked cracker chips. It was really delicious. Even my boyfriend's brother, who doesn't like anything, tried it and liked it so much he went out and bought more cracker chips so we wouldn't run out during the game.

Easy Chili I

I really love this recipe. Every time I make it, I get rave reviews and people are constantly asking for the recipe. Only changes I make: I like my chili to be meaty so along with lean ground chuck, I also add 1 pound Italian sausage which tastes wonderful. I'm not a big fan of chili beans, so I use one can of dark red kidney beans and one can of black beans, both rinsed thoroughly to remove excess salt. These beans give it a nice color and taste great. I leave out the bay leaf and jalapeno peppers since not everyone likes it spicy. I like to serve it with cheesy cornbread. Definitely one of my most requested meals!
