Awesome Pasta Salad

A perfect make-ahead hit! I used tri-colored pasta for added color, halved the recipe, (this makes a ton), added a pinch of sugar, and eliminated the salami. I used Wishbone Robusto and put in half, then right before serving, added the other half. It is such a beautiful, flavorful dish!

Chicken Enchiladas I

We all loved this! Followed the recipe exactly except I did saute the onions and garlic before adding. Other reviewers said this didn't need all that water -- they were right; I had to let mixture simmer to cook the water out, but it is a PRETTY dish and very good. Good enough for company!

Three Cheese Baked Pasta

Wonderful meal! I did add 1/2 tsp. garlic salt and 2 tsps. Italian seasoning to the sauce and a clove of garlic to the meat while it cooked. Bake on a cookie sheet or it'll mess up your oven for about an hour or longer since it was only lukewarm after the 30 min. This makes a ton! Next time I will put Mozzarella on top for the last few minutes so it will look prettier.

Fettuccine Alfredo IV

Only one star because of the unbelievable unhealthiness of this recipe. Only serve this if you're not interested in serving healthy meals. I actually felt guilty serving this to my family. I should have realized a cup of butter plus a cup of heavy cream would be way too much heart-clogging stuff in one dish. My goal is always to serve healthy main courses. It tasted OK, but the next night when I went to serve leftovers, I did not care for it! The fettuccine was virtually swimming in melted grease.

Italian Rice Pie I

I really liked this since it reminded me so much of my Italian dinners as a child -- however, my children did not like it at all. I think the texture bothered them. My son spit it out. So I cut it up into squares and took some to the school where I teach and put some on the table in the lounge where we all bring goodies. No one said they liked it and I saw two pieces in the trash. I overheard someone say they couldn't figure out whether it was a dessert, a brownie, or cornbread (lol!) Possibly this wonderful pie is an acquired taste.
