Milk Chocolate Pecan Pie

Delicious. I did find it a bit runny so I added another cup of pecans and I had to cook it about 15 minutes longer to set. Make sure you use tin foil as suggested in the recipe or your crust will burn. Very yummy! Big hit!

Chocolate Chip Bran Muffins

Delicious!! I made a few changes to up the nutritional value. Subbed whole wheat flour for all purpose and subbed low fat sour cream for oil. I was out of white sugar so used brown sugar. I took someone's advice and added a bit of vanilla and crushed the bran flakes for a more consistent texture. I also used two cups skim milk with 2 Tbs lemon juice (homemade buttermilk without the fat) in place of the actual buttermilk. Amazing!! Still very tasty, and "dessert" tasting with the changes. Thank you for sharing this recipe.

Pumpkin-Oat Scones

I thought these were great. I did use whole wheat instead of all purpose flour to up the nutritional value and added extra pumpkin and 1/3 cup brown sugar (other reviews said it wasn't sweet enough.) I used the glaze suggested then also melted 1/3 chocolate chips and drizzled that on top as well. Plenty sweet. Delicious treat. Thanks for sharing.

Stuffed Green Pepper

Very tasty! We used ground turkey so it was a bit healthier and I tossed in some spinach into the sauce for an extra veggie. Everyone loved it...even the people who turned up their noses as "stuffed green peppers." Big hit.

Pumpkin Pancakes

Very good. We didn't make the syrup and the pancakes weren't as sweet as we'd like so I added an extra TBSP of sugar and a splash of vanilla to the batter. I made it with whole wheat flour and it wasn't too heavy. I threw in a chocolate chips and it was fantastic. We topped with ground cinnamon roasted almonds. Great pumpkin pancake recipe. Thank you!!

Lentil and Green Collard Soup

This was very good however way, way too salty for my taste. 1 tablespoon was excessive. Next time I will do 2 tsp. You can always add more when you are eating, but you can't take it away. Good recipe though. I will definitely make again!

Chocolate Pudding Fudge Cake

Awesome!! The only thing I changed was only putting 1 cup of chocolate chips in the cake after reading a few reviewers saying it was too rich with two. It was delicious. Everyone scraped up every bite and my husband said it was the best cake he's ever tasted. Very rich and moist.

Purple Plum Pie

Awesome! I skipped the bottom crust and made it more of a crisp. Subbed half brown sugar for white, added a touch more cinnamon and oatmeal. I also made 1 1/2 times the topping since I switched it from a pie to a crumble. Delicious!

Colleen's Slow Cooker Jambalaya

Got rave reviews. From other reviews, I took their advice and used the excess liquid from the slow cooker and remaining chicken broth from the can in my rice cooker to cook the rice. Very flavorful and still plenty of liquid was left in the dish. I did only use half the cayenne to taste and left out the sausage for dietary reasons, but very easy, yummy recipe. We'll definitely use again.

This was good, but I should have read the reviews first. It was way, way too salty because the chicken broth I used already had salt added. Beware if you use packaged chicken stock, you may not want to add additional salt.

Healthier To Die For Blueberry Muffins

Tasty! Although they are healthier, they certainly aren't healthy. However, it's easy enough to adjust any recipe to be healthier. The only difference in this one was exchanging apple sauce for oil and adding extra blueberries, but if you are really worried, use can sub half whole wheat flour and either leave off the topping or just use half to save on fat and calories. I only used half and it was just as good. Also, I'm not clear if salt was left out to make them healthier, or an oversight, but I made it without as the recipe suggested and it was just as tasty.
