Quinoa Side Dish
This is a great recipe for a basic way to cook quinoa, and change up the ingredients to your taste! I used low-sodium chicken broth instead of veggie, so I didn't have to add the salt. I also cooked the onions with the quinoa, and opted for fresh grated ginger and fresh chopped basil instead of the parsley and thyme. I also added 1/2 teaspoon more of garlic (because who doesn't love garlic?!). I served it with steamed broccoli - overall an easy, quick, SUPER TASTY meal!

Asian Lettuce Wraps
This recipe was super easy and extremely tasty. My boyfriend and I agreed it was a much preferred replacement for our usual fajitas, which are not quite as healthy or flavourful. I did alter a few things and the wraps still turned out great. I used soy meat instead of ground beef (easy to cook with because it is pre-cooked, takes on the flavours of whatever dish you use it in, and is a much healthier option). I also used chopped red peper instead of water chestnuts for more flavor but still with some crunch. Finally, I added grated carrots and bean sprouts to be used on top - a great addition! They added extra texture and flavour. I really recommend this recipe, its perfect for every level of "at-home chef" out there!
