Tender Italian Baked Chicken

The flavor of this dish is great, but just a quick warning about applying mayo. I spread the breast fillets with light, olive oil mayo mixed with tangy mustard. I did not dip them to save fat and calories. I used panko crumbs as suggested by other reviewers. I baked on a rack. The chicken did not brown either on the top or the bottom, and stuck terribly to the rack. This recipe must require lots of full fat mayo in order to crisp up as I can't think of any other reason that it didn't turn out. I won't make it as suggested in the recipe as it is way too high in calories and fat for my husband and me. That doesn't make it a bad recipe by any means, just not good for our diets.

Cranberry Scones

I made this recipe after reading the reviews, so I added an extra 1/2 stick of butter and half cup of flour, also substituted frozen blueberries for cranberries. They were still too sticky to knead, so I just formed the dough into 2 circles on a cookie sheet and cut into triangles. Absolutely not a scone, but a tasty cross between a muffin and a cake. We liked them as they were tasty, but the texture was simply not sconelike at all. I'm still looking for a wonderful scone recipe.

Flourless Chocolate Cake I

I had a flourless chocolate cake at our local bistro and was determined to find a recipe. THIS IS IT!!!!! I follow the directions exactly using 60% Ghiradelli chocolate. I have used both a 9" sprinform and 10" regular cake pan. Both work fine and the cake releases easily. It is beautiful and absolutely delicious. The second one didn't age for 24 hours, and it seemed the texture was not quite as smooth, so from now on I won't skip that step. All in all, this is a definite keeper!!!!
