Turkey Veggie Meatloaf Cups

Reviewed: Aug. 8, 2013
FANTASTIC!!! The only reason I am not giving the recipe 5 stars is because it did need some extra spices. I followed the recipes exactly but added 1 tsp. garlic powder, 1/2 tsp salt and few shakes black pepper. Without those additions I think they would have been bland, with the additions they were delicious. For the BBQ sauce I used Sweet Baby Ray, I think that is the name. You don't need much. Too much and it is overwhelming. I baked them for 27 minutes. I will make these over and over again!!

Fluffy Pancakes

Reviewed: May 18, 2013
Just made this for a Mother's Day brunch. Everybody loved them. We followed the recipe exactly but added 1 tsp vanilla. The pancakes were dense and fluffy at the same time. How that's possible I don't know but they were fantastic.

Oven Scrambled Eggs

Reviewed: May 18, 2013
I made this recipe last year and it was way too much butter and it took longer to cook than the recipe stated. But I just recently made it again, only a half recipe. I used half the amount of butter in the recipe and used an 8 x 8 pan. It cooked up in 25 minutes and was fantastic. Definitely use half the butter but if you make a full recipe you will need additional time to cook it.

Old-Fashioned Vegetable Soup

Reviewed: Nov. 5, 2012
This soup is fantastic. I made a few changes. I used 2 Tbsp. olive oil instead of the butter and added 1 potato, 1 zucchini, and 1 tsp oregano. I used vegetable broth instead of beef and with all the soy sauce there is no need for additional salt. Other than that I followed as written and it is fantastic and easy and very flavorful. My hubby loved it!! Very filling.

Chocolate Chip Cake Bars

Reviewed: Aug. 9, 2012
This was excellent and very easy. I used a combination of mini semi-sweet chips and a half a cup of peanut butter chips. Mu husband loved them, as did I. They did need to bake longer than the stated time though.

Chicken and Mushroom Saute

Reviewed: Jun. 10, 2012
This was excellent. I added onions like some of the other reviews suggested. Also I used fresh mushrooms. Finally I made quite a bit for a dinner party so I could not get all thieves back in the pan after sautéing. So I put all the pieces in a dish, covered with the sauce and put it in the oven at 350 for 12 minutes and came out perfect.

Hazelnut-Mushroom Pilaf

Reviewed: Jun. 10, 2012
Delicious, I was going to use almonds because I did not have hazelnuts but then I forgot the almonds. Even without them the rice was incredible. My husband could not stop raving. Followed the recipe as is except for my forgetfulness!

Apple Turnovers

Reviewed: Jun. 10, 2012
I don't eat these but my husband and uncle loved them. I too doubled the cinnamon like the other reviews and otherwise followed the recipe. They loved loved loved them. 2 tips, I found that about 1/4 cup was about the right amount of filling for each turnover and 1 tbsp milk is a little too much for the glaze, it will be too thin so start with a little less.

Spanikopita

Reviewed: Mar. 26, 2012
These were unbelievable. I followed the recipe as written and the suggestions of other reviewers and added 2 large eggs and 1/4 tsp nutmeg to the mixture. It was my first time working with phyllo dough. Not the easiest thing in the world but definitely worth it. I agree with another reviewer who said the process is much easier with 2 people. Everyone loved these. I also just used garlic powder instead of minced garlic and left out the salt because feta is plenty salty on its own and the flavor was amazing.

Chocolate Mousse Pie

Reviewed: Mar. 26, 2012
I followed the recipe as written with the exception that I used 7 oz. of milk chocolate chips rather than a chocolate bar. Other than that I followed as written, and used 1% milk. I sprinkled additional chips on the pie once it firmed up. It was excellent. People raved. I also baked a premade shell, it was fantastic and fairly easy. I would definitely recommend and make again!

Fluffy Peanut Butter Frosting

Reviewed: Jan. 29, 2012
The frosting was delicious. I put it into a pastry bag and frosted chocolate cupcakes with it so I can't comment on its spreadability but the flavor was amazing, light fluffy and almost every cupcake was gone. I ended up using a little less than 3 tablespoons milk. The frosting was not greasy at all. I will definitely make this again and again.

Fluffy White Frosting

Reviewed: Jan. 29, 2012
This frosting was delicious. It tastes like it is made from marshmallows. Everyone raved. I whipped for less than the 7-10 minutes listed and the peaks were stiff but after I refrigerated the cupcakes the frosting seemed to soften a bit so next time I will whip for longer. Other than that it was perfection.

Sour Cream Chocolate Chip Cake I

Reviewed: Jan. 20, 2012
This cake was very good, I baked it in a bundt pan. It was very moist and I used mini chocolate chips. I did not have the problem of the chips falling to the bottom like some other reviewers. I baked for just around 30 minutes and it was baked all the way through. Of course I forgot the vanilla because it is not listed in the instructions but caught myself right before it was too late. DON'T FORGET THE VANILLA!!

Absolutely delicious. Very easy, followed exactly, but left out the chile paste. Had great flavor. I could not find Udon noodles so I had to use spaghetti noodles but still fabulous!!!

Mediterranean Chicken

Reviewed: Jan. 16, 2012
This recipe was okay. I left out the olives and used canned chopped tomatoes. Other than that I followed the recipe and it lacked any real flavor so once it was finished I had to stand and add a whole bunch more spices and I can't even remember now what I added. I will make it again but will be prepared to add significantly more spices.

McCormick® Double Chocolate Chunk Mint Cookies

Reviewed: Jan. 16, 2012
These were delicious. I would just caution that I lined my light colored cookie sheets with parchment paper (I prefer using parchment paper over cooking spray) and the cookies took about 13-14 minutes to bake, anything less and they were raw and falling apart.

Savory Deviled Eggs

Reviewed: Jan. 16, 2012
I love these. I did use rice vinegar like some of the other reviews. I will caution that the filling was SALTY but I realized that after it sat overnight the saltiness was gone and the flavor was wonderful. I have been cutting on the salt. other than that it is a wonderful recipe.

Chinese Chicken Fried Rice II

Reviewed: Jan. 16, 2012
This was great and easy. I added a lot more vegetables than the recipe calls for, just buy the frozen bags of mixed Chinese vegetables. It is much easier though to just scramble the egg. I am not sure what the benefit is of cutting the egg into strips other than just wasting time. Other than that the recipe is fantastic. I also used less butter and less oil. It's just not needed and the pepper is a little overwhelming so you may want to cut back on that as well.
