Pomegranate Feta Salad with Lemon Dijon Vinaigrette

Fantastic! The only changes that I made was using rice wine vinegar, which lends it a sweeter taste. I think that a blueberry vinegar would add a nice flavor to this, as well. I also used an oil mister rather than measuring. This finely coats the greens but uses less oil. Amazon has a great selection of vinegars.

Roasted Garlic Lemon Broccoli

This is delicious. I did, however, make *small* modifications. No salt. I only use salt for baking. Otherwise we use Mrs. Dash. I always use an olive oil mister rather than measuring. (I highly recommend an oil mister!) This was each piece gets a light mist, and I use less oil. Instead of lemon juice, I used lemon zest instead of lemon juice. Lemon zest gives it a deeper flavor and fantastic aroma. The aroma rather lends to the taste. I also tossed the zest, garlic, broccoli and oil in my baking pan. One less dish to wash. Lemon zest instead of juice is great on salads, chicken, pasta salads.

Oriental Edamame Salad

Seriously good! And my husband loves it. For me, that's the test. He has to love it. The one change that I made is that I used fresh, raw corn off the cob, because it's in season. Fantastic. When corn isn't in season, I'll use the frozen. Thanks for a great recipe.

Crispy Edamame

I have a new love! Even my husband loves these. He is a converted health food nut. Heart/lung disease requires it, but he's making a happy converter, because I find things that are good! One suggestion that I have not read, but I didn't read all the comments, is to use *real* fresh grated parmesean cheese, not the powder stuff that one buys in a plastic bottle. It seems as though buying a chunk of *good* parmesean would be more expensive, but you actually use LESS, because there's so much more flavor in the better cheese. Also, using less means that you use less fat. A definite win-win situation. If you're still using the stuff in the plastic jar, try fresh parmesean. You'll wonder why that powder stuff is even called 'cheese'. It's also great on broccoli.

Southwest Chicken

This is a great recipe to serve as a main dish, shred the chicken for a salad, or use in a tortilla. You can also modify the recipe by adding jalapenos (minus the seeds for me!), chili powder, onion, green/red peppers, using whatever beans you have on hand, or cooking the chicken with fresh garlic. Also, fresh corn scraped off the cob adds incredible flavor. As is, this recipe is great, but you can also use it as a springboard to create other variations. I make this for my husband because he has to eat low fat, but it has tons of flavor. He loves it. Fantastic.

Peanut Butter Cup Cookies

I've made this recipe before, and I know that it's in-cred-u-licious. For those who don't have the time to make the peanut butter cookie dough, you can also use the rolls of PB cookie dough in the refrigerated section, i.e., Pillsbury. It's much easier to cut the rolls of dough if they are still partially frozen and you use a good knife. Also, I mean no disrespect, but who EVER has any Reese's PB cups left from their kids' Halloween goodies??? If the kids don't gobble them, you know that the parents do! Thanks for posting such a great recipe.
