Green Beans for a Special Occasion

I loved the fact that there was a basic recipe provided for me which I could alter to fit the theme I had going for my meal. Here's what I did: Instead of olive oil, I used canola oil. Instead of hazelnuts, I used chopped roasted almonds since I had them on hand. After they were finished cooking, I squeezed lemon juice over them and topped them with a small dusting of grated Parmesan cheese. I served them with blackened chicken with lemon juice and brown rice. Next time, I will follow the recipe exactly because it's simple and I think it will be delicious!

Steak and Spinach Salad

This was unbelievably filling and delicious! Only changes I made were how I seasoned the steak and the fact that I added bleu cheese (the hubby and I love bleu cheese on salads). I used a Steak & Chop seasoning and prepared the steak medium rare. We used ranch dressing. I also added chopped apple, which added great texture and nice contrast to the cranberries. I've made this with blackened chicken as well, and it's just as yummy!

Southwestern Chicken

AMAZING! I have used this spice mix with both chicken AND steak (although, truthfully, I prefer it on chicken), as well as without the lime (I definitely missed it when I didn't use it!). I had to purchase the chili powder, but it was well worth it because I plan on using this recipe again and again. It's so hard to believe this recipe is good for you! I served with brown rice with salsa and small amount of sour cream, as well as charred red and green peppers and a sweet onion that had been seasoned only with a little salt and pepper and sauteed in canola oil.

A Good Easy Garlic Chicken

Very good and very simple. Nothing overpowering. I served with a packaged gravy to which I added a tiny amount of white wine vinegar and mashed potatoes, along with corn. I have all the spices on hand all the time so this will be a good go to meal.

Blackened Chicken

My husband loves blackened anything, so I when I found this, I knew I had to try it. It was spicy enough to please him, but not so spicy I couldn't eat it. I generally steer clear of blackened meats because they are incredibly salty. I was very excited to see that the recipe called for so little salt. I didn't have white pepper on hand, so I used black instead--still delicious. I didn't bake it, though. I cooked it in my grill skillet with a touch of canola oil for about 7-10 mins per side. I served with brown rice and green and hazelnut recipe I found here. I will definitely be making this again!
