Just baked this bread for the first time and it turned out terrific! I really loved how it turned out. The only thing I would change is to not add so much honey next time, because my husband thought the bread was too sweet for his liking. I'll definitely bake this wheat bread again! Also, I used my Aunt Rita's advice (she's made homemade bread for about 40 years!) before I put the dough into the baking pans, I flattened it out gently with a rolling pin & then rolled it up "jelly roll" style & then the dough fit perfectly into the bread pan & it prevents any air pockets. Then when I took the baked bread out of the oven, she suggested I put each pan on its side for a few minutes to cool, exposing the bottom of the pan to more cool air before turning them out onto my cooking racks.
