Blueberry Cornmeal Muffins

Just made these & they tuned out wonderful! I made 2 changes, though. Instead of frozen blueberries, I used fresh and instead of milk, I used buttermilk. My husband loved them too! Will definitely make these again & again! :-)

Simple Whole Wheat Bread

Just baked this bread for the first time and it turned out terrific! I really loved how it turned out. The only thing I would change is to not add so much honey next time, because my husband thought the bread was too sweet for his liking. I'll definitely bake this wheat bread again! Also, I used my Aunt Rita's advice (she's made homemade bread for about 40 years!) before I put the dough into the baking pans, I flattened it out gently with a rolling pin & then rolled it up "jelly roll" style & then the dough fit perfectly into the bread pan & it prevents any air pockets. Then when I took the baked bread out of the oven, she suggested I put each pan on its side for a few minutes to cool, exposing the bottom of the pan to more cool air before turning them out onto my cooking racks. Chicken Curry and Potatoes

I made this for the first time & we enjoyed it very much! I took the advice of another reviewer & added some green peppers, mushrooms & even 2 parsnips to the potatos. We didn't have the hot curry powder on hand, just the regular curry spice, so we added some oriental hot sauce in a pinch & it all worked out great. I'll make it again for sure.

Potato Leek Soup III

Made this today for St. Patrick's Day and everyone LOVED it! So easy to make. I should have doubled...or even tripled it! (so we could have leftovers) 5 Stars from me! :-)

Sarah's Applesauce

This was my first time ever making homemade applesauce, and I was shocked at how easy it was! I used honey crisp apples, and they tasted just great! It was a very sweet & cinnamony applesauce & filled the kitchen with the best fragrance! Will do again for sure! :-)

Baked Salmon Fillets Dijon

We loved this easy recipe! I used a little more digon mustard than it called for and that worked out great. I used the plain panko (coarse chopped) bread crumbs that I had on hand, along with a few dashes of a spice called "Garlic Garni"and that worked out wonderful. So quick & easy to fix, yet it tasted like it was complicated to do. We'll do again for sure! :-)

Chicken with Lemon-Caper Sauce

Fantastic recipe that will be an easy pleaser. I agree with the other person who doubled the sauce recipe so that there would be enough to cover the pasta. However, I found the sauce to be a bit runny. I'll have to think of what to do to thicken it for the next time. I'll definitely cook this again! :-)
