Simple White Cake
I made this for my husbands birthday and I will be going back to this recipe again and again. I doubled the recipe to make a layer cake and subbed in butter milk in place of regular milk. I made a butter cream frosting put raspberry filling in the middle. The key I think is mixing it very well. I heard the word "best cake I've ever had" being said. Next time trying a lemon curd filling with coconut topping yummm!

Barbequed Steelhead Trout
I put this delicious trout atop a arugula and spinach salad with a warm cider vinaigrette. I served with croissants and voila a salad my husband thoroughly enjoyed. Next time I would cut down on the butter a bit. Note: It was the winter so i put it in the oven under the broiler for about 10 minutes then basted with bbq sauce and continued to broil for about another 5 minutes.

Tofu Parmigiana
I am a vegetarian and I love tofu. However there are non vegge peeps in my family. Those people loved this dish. My 2 year old son gobbled it down and my hubby went back for seconds. I used fresh mozzarella and fresh basil. This is going in my recipe box and will be makeing it AGAIN AND AGAIN!
