Greek Saganaki

Reviewed: Apr. 3, 2004
I live in a very large Greek community. We enjoy Saganaki often but, this recipe is different. We use a Greek cheese called Kasseri which is a harder cheese than Feta. We follow this recipe almost...at the end of frying time, we pour one ounce of liquor over the fried cheese ( 151 rum ), then light it on fire, the put out the flame by squeezing lemon juice over it....OPA!!! It's awesome...try it this way sometime!

Fried Plantains

Reviewed: Dec. 29, 2001
I've made these for years and years. My sons love them with crumbled feta cheese on the slices for a salty flavor. Or sprinkle with cinnamon sugar for a sweet flavor...both ways are awesome!

Orange Pork

Reviewed: May 11, 2004
Ohmigosh!! This was really good! Of course, I used some of the suggestions of other reviewers. I almost never make a recipe as written. I dredged my thin chops in flour, browned in olive oil and removed to a plate. Then, in the oil in the pan, I sauteed two minced garlic cloves and green onions (6) sliced on the diagonal. Used brown sugar instead of white. Before adding cornstarch mixture, I shredded one whole carrot into sauce mixture. After thickening the sauce, I added one 6-ounce can of mandarin oranges and returned pork to pan. Oh, by the way, I mixed cornstarch with the juice from mandarin orange can instead of water. I doubled the sauce ingredients except the soy sauce. Served over white rice and passed crushed red pepper at the table. This was awesome! Can't wait to try it with chicken!

Greek Orzo Salad

Reviewed: Nov. 19, 2002
I made this recipe with some changes. I added garbanzo beans and green onions and chopped up the artichokes. Also, instead of using the drained marinade, I added some KRAFT Greek Vinaigrette Dressing that was in the fridge. This turned out really good! I wasn't sure if my son liked artichokes or not, that's why I cut them up. My boyfriend and I love them so I couldn't omit them...the boy would have to suffer! Turns out, everyone loved the salad...and, the kid likes artichokes! My son's girlfriend was over the day after and had some and she loved it, too. I also used gemelli pasta instead of the orzo...it was awesome!! Thanks! Erin

Spicy Mango Salsa

Reviewed: Jun. 27, 2003
This was awesome...but, I only used the recipe as a guide. I diced up one mango, one peach, and used one small can of pineapple tidbits, two scallions, half of a jalapeno pepper, diced very small, one teaspoon of minced garlic from the jar,a sprinkle or two of ground ginger, about a teaspoon of dried cilantro, half fresh lime juice and half pineapple juice (from the tidbits can) to equal 1/4 cup...mixed all together and let it sit in the fridge for about 2 hours. Made chicken tenderloins on the George Forman, then cooked in skillet with teriyaki sauce to heat. After chicken was done...heated salsa in micro for 1 minute, poured over chicken. Served with teriyaki rice and green beans...WAS AWESOME!!!!!

Fra Diavolo Sauce With Pasta

Reviewed: Aug. 8, 2002
I've made this 3 or 4 times in the past couple months and it is just the greatest! I also added mussels to mine and this recipe is just so awesome! I also added a little red wine...to die for! My son who goes to college about 4 hours away called me up one day and said, "Mom, I'm coming up tomorrow for the weekend...PLEASE make that spicy mussel stuff!" Of course, he was referring to this recipe. We all loved it! Thanks

King Crab Appetizers

Reviewed: Mar. 24, 2002
These were really good. I used fresh crabmeat and I also used the phyllo cups which made this a very easy recipe. My brood loves lemon so I squeezed fresh lemon juice over the tarts after they were done baking. Very good recipe, thanks for sharing.

False Cabbage Rolls

Reviewed: Jan. 19, 2004
This was much easier than making cabbage rolls and tasted pretty close to the real thing. I also used one can of diced tomatoes instead of one of the cans of soup. I put white rice in the bottom of a soup bowl and put the cabbage mixture on top. We also sprinkled with parm cheese. The next day for lunch we mixed the rice and cabbage mixture together and re-heated...even better the next day! Great alternative to cabbage rolls when you don't want to do all the work.

Fruity Ham Glaze

Reviewed: Nov. 12, 2002
This recipe was very tasty. I think it was more of a sauce than a glaze, though. Which was fine with us. We had a thick cut center ham slice and I followed the directions on the ham package for the time and temp to bake the ham. The last 15 minutes of baking time, I added the "glaze" to the top of the ham, baked for the remaining time and the "glaze" hadn't "glazed". I then upped the temp and baked 15 minutes longer. It still was saucy on top. I halved the recipe and there was still at least a cup of sauce/glaze left. We just dipped our ham in it as a side sauce. The flavor was really good, just not what I expected. This sauce would be really good for dipping Chinese eggrolls in. Thanks! Erin

Suki's Spinach and Feta Pasta

Reviewed: Jun. 28, 2003
Very tasty...the first time I made it I added shrimp...was awesome. The second time I made it, I didn't add the shrimp but added artichokes instead. Both times were very good, but it was better with the shrimp. I also used 4 cups of spinach because we love it and it cooks down alot. Also, the first time I used canned tomatoes and we thought that tasted better than it did the second time when I used fresh.

Chocolate Delight

Reviewed: Nov. 10, 2002
I'm not a big chocolate fan but everyone else in my household is. Everyone thought it was really good...even me. It doesn't keep well, though, so be prepared to eat it all...and it makes alot. I used Bailey's Irish Creme instead of Kahlua because that's what I had in the house. Very good dessert. Thanks! Erin

Brandied Candied Sweet Potatoes

Reviewed: Nov. 12, 2002
This recipe was awesome!! I only had 1/3 cup of brandy and it still turned out great! Nice change from the marshmallow topped casserole. Even if you don't like sweet potatoes, you'll like this! I served with a thick cut center ham slice and brussel sprouts...it was really good. Thanks! Erin

Romantic Chicken with Artichokes and Mushrooms

Reviewed: Aug. 6, 2002
This recipe was awesome! I used legs and thighs instead of breasts. I added garlic and herbs de provence as suggested in earlier reviews. I did remove the chicken from the pan at the end of cooking and added cornstarch to thicken the juices, then returned the chicken to the pan. It turned out great!!! I served it over buttered noodles with sauteed spinach on the side. My boyfriend and I both love artichokes and mushrooms...and it was very romantic...he was lovin' on me all night after that dinner, even before, because the aroma while it was cooking was so heavenly. Thanks so much. This recipe was awesome

Spicy Orange Beef

Reviewed: Jun. 26, 2002
We all really loved this recipe. I left out the zest and doubled the marmalade. I also added green onions and sugar snap peas and served it over white rice...it was delicious! I also printed out the recipe and gave it to my grandmother (she's an awesome cook) and her whole household loved it as well. Thanks!

Vienna Schnitzel

One of the best recipes I've ever made from this site. Was absolutely fabulous. If I could, I'd give it a trillion stars. Lemon juice over the finished product is the key. Served with red cabbage and mashed potatoes...AWESOME!!!

Super Duper Easy Apple Cake

Reviewed: Dec. 28, 2009
This cake was awesome! I used canned apples in water and used the juice from the can for part of the water for the cake mix. I put chopped walnuts on the bottom of my Bundt pan and poured the batter over. Glazed with mixture of powdered sugar, cinnamon and apple juice. Was a big hit!

Golden Rum Cake

Reviewed: Oct. 26, 2008
I made this cake yesterday, as written, with the exception that I used sliced almonds instead of walnuts. It was sooooo good!!! Today I made another one and used coconut pudding instead of vanilla, used pineapple juice instead of water in the cake and glaze and I put pineapples and shredded coconut in bottom of the pan along with the almonds, then poured the batter over it. The first time I ever "ate" a pina colada!! And it was awesome!! Thanks for the recipe. This will be made over and over again with many different variations. Someone else mentioned using chocolate cake and chocolate pudding and using Kahlua for the liquor...I think I'll try that one next!
