Oat Bran Muffins

This recipe is delicious, but it is precisely the same recipe on the Hodgson Mills Oat Bran box. Probably should give credit where credit is due!

Wonderful Banana Cake

OH MY GOSH, this is honestly the most OUTSTANDING banana recipe I've ever tried!!!! VERY YUMMY!!! Will use this instead of the standard banana bread recipe from now on! YUMMMM!!!! And it doesn't get any easier! I followed the suggestion of another reviewer & preheated my oven & baked for only 40 minutes...turned out perfectly & hubby & kids loved it just as much as I did!

Buttermilk Honey Wheat Bread

Now THIS is a good bread recipe!!!! I used the dough cycle in my bread machine and then set it in a loaf pan for a 2nd rise. And then I forgot about it & when I remembered it, 3 hours had passed! It had DEFINITELY doubled in size! But then I baked it as instructed in my oven and it turned out SO YUMMY!! I'll use this one again & again.

Texas Ranch Chicken

This is very good, although I changed it up a little after reading the reviews. I seasoned the chicken w/ garlic powder & pepper & then browned in a skillet a little. Then I used 1/2 Ranch dressing (from a bottle) & 1/2 sour cream. At the end, I topped w/ Cheddar cheese. My husband absolutely loved it & said he likes it better than any other chicken dish I've cooked.

Chicken Enchiladas II

These are very good & I will use this recipe from now on when making chicken enchiladas. However, I DID NOT use flour tortillas; I like corn tortillas much better so I used those.

PB & J Pinwheels

These taste great, but I had a VERY hard time working with the dough. It is extremely messy! I couldn't quite roll it up in an even circle; it was more oblong, so now I have very large oval cookies. Also, I had to bake them A LOT longer than 12 minutes - almost 25 minutes. Don't know if I'll try again.

Honey Wheat Sandwich Rolls

These are DELICIOUS rolls!! My husband & I thought they were restaurant quality! I made some shredded barbecue beef & used the rolls to make BBQ sandwiches. Yum! Will keep this recipe close by & use again & again.

Salmon with Pecan Honey Glaze

This is a *****FIVE STAR***** dish all the way!! My husband & I absolutely loved it & will definitely cook it more often. It's a great way to get that "twice-a-week" fish recommendation into your diet. I followed the recipe as instructed, only cut it in half for 2 servings. The honey glaze w/ the toasted pecans were just the right touch of sweetness with the fish.

Gourmet Chicken Pizza

This is absolutely delicious. I used a Boboli Thin Crust & seasoned it before I layered the ingredients. I also seasoned the chicken with Italian seasoning, garlic powder & salt/pepper before I cooked it. My husband loved it, too!

Banana Bran Muffins

These are my very favorite muffins of all time!! I will make these all the time now. I used part whole wheat flour, part all purp flour. I also added a little wheat germ for that "extra" health bonus, and I used oat bran instead of wheat bran. EXCELLENT!!

African Chicken Stew

I thought this was ok. It left a very "pasty" film in my mouth, I'm sure from the peanut butter. Also, it was pretty spicy. I don't know how in the world the other reviewer's 2-year-old ate it!

Oatmeal Blueberry Muffins

These are excellent. I didn't have enough blueberries on hand, so I added a few blackberries & it was delicious. I loved the taste of the oatmeal, too. I also took the advice of another reviewer & used part whole wheat flour/part all purp. flour.
