I am a 38 year old working mother. I am married to a wonderful man and we have two terrific kids: an 8 year old daughter and a 6 year old son. I work as the Assistant Administrator at our local economic development office. In my free time I enjoy scrapbooking; I am also an avid reader, internet/computer geek, movie watcher, amateur photographer and news/ political addict!
My favorite things to cook
I really enjoy cooking the cajun food I grew up on! There is nothing better than AUTHENTIC cajun cooking! I also like experimenting with different recipes especially ones that are quick and easy to make during the week. On the weekends I prefer trying recipes that are a bit more challenging. I like cooking all different types of ethnic food.
My favorite family cooking traditions
Making the delicious cajun foods that are staples down here. Gumbo, sauce piquant, crawfish ettoufee, boiled crawfish, jambalaya, crab stew etc. These are not healthy dishes but they are SO good!
My cooking triumphs
I finally found a crawfish ettoufee recipe that wins raves from my family! I am also a great dessert maker.
My cooking tragedies
I managed to completely screw up a tuna casserole! After the casserole was halfway thru baking I realized I had forgotten to put in....THE TUNA! My family has never let me live that one down.

Holiday Cranberry Sauce
This recipe is just wonderful and I have gotten raves both times I have made it. I used a 12oz bag of cranberries, substituted orange juice for the water and added in the zest of half an orange. I also cut the sugar down to 1 cup and used light brown sugar. Finally, I added in a handful of chopped pecans (probably equal to 1/4 to 1/3 cup) a minute or so before I took the sauce off the stove. The spices and the orange zest really make the sauce incredibly flavorful.

Greek Layer Dip
Made this for an office party and it disappeared so fast I wish I had made a double batch. I did make a couple of small changes. First, I used roasted garlic hummus since I prefer that flavor. Also I seeded the cucumber and tomatoes before chopping to keep the mixture from being too watery. Finally I used greek seasoning and a pinch of salt instead of just oregano. I find that the mint and other spices in the greek mix just had a better flavor. Layered in a 9" pie plate and served with pita chips, carrots, and celery. Huge hit!!!

Tacos in Pasta Shells
Absolutely delicious dish! I did make a few changes after reading the reviews. First, since we didn't have ground beef, I used ground chicken. I omitted the salt and chili powder and instead added in an envelope of taco seasoning and some cilantro to the cooked chicken to add extra flavor to the filling. Also, I put a jar of Pace chunky salsa in the bottom of my baking dish to prevent the shells from drying out. Used a can of red enchilada sauce to pour over the shells. I also used one cup of shredded mexican cheese blend and one cup of shredded pepper jack. The shells came out fantastic and we served them with shredded lettuce, sour cream and black olives. Even my picky kids loved them. Will definately make again!
