Wow! After trying so many promising recipes, I never thought a "chewy chocolate chip cookie recipe" would ever really deliver. This was it! It's now my go to recipe for chocolate chip cookies. I'm still trying to understand the reason for melting the butter. I did as others suggested and put my dough in the fridge for an hour before baking--thus the butter was back I. Its original state. If the dough isn't refrigerated, the cookies would be flat. I'm going to try these cookies using room temperature butter and see if I get the same results. I'm sure it's the extra yolk that make these soft and chewy, BUT I'm not a chef so I could be wrong. Awesome recipe regardless!
