Oven Roasted Teriyaki Chicken

Made this tonight and substituted honey for the Splenda and I used low-salt Soy. My family really enjoyed it. I will make again with boneless/skinless thighs. Served with brown rice and sauteed spinach.

Baked Penne with Italian Sausage

Made this tonight and both kids (15 and 12) went back for thirds!! I added some dried basil and Italian seasoning to the meat/onion when cooking. I had some Turkey Sweet Italian sausage I used and the canned diced tomatoes I chose were Fire Roasted with Garlic. Delicious! Will be making again for sure!!

Baked Fried Eggplant

Kids didn't care for this, but my husband and I liked it. Had to bake it for about 20 minutes longer to get crispness I like. Would add salt and pepper.

Baked Ranch Chicken

Balsamic Roasted Pork Loin

I used a 4lb roast and doubled the ingredients. Had LOTS of sauce leftover for mashed potatoes, rice, or any side you wish! The balsamic smell in the house during the day was making our mouths water! I did add honey to the recipe as some reviewers suggested....think I will add garlic next time. Made this for company and it got good reviews from all, even the kids - 17, 15 and 12.

Quick and Easy Sauteed Spinach

This was really good, but too much garlic salt for our liking! Next time I will use fresh garlic and if I don't have some on hand, will 1/2 the garlic salt. Overall, very excited for an easy fresh spinach recipe. Will double next time as well! Thank you.

Chicken Fried Steak I

This was the first time I've made this and was worried about it coming out as good as my kids have had at restaurants. It was delicious!! I have given 4 stars as since this was the first time I've made gravy like this, I was confused at the quantity of milk to use...wasn't sure I was to use the whole quart of milk or only what I needed. I understand it's hard to determine based on taste and preference, but perhaps you can suggest adding one cup at a time?

Crunchy Oven Fried Tilapia

This was very tasty. We didn't have any basil (I know, crazy) but we did have some Pampered Chef Basil Citrus Rub which was good...I'd actualy add more than what's called for of Basil or added spice. Would be good to cut the fish in strips for fish sticks, too!! Thank you!

Salsa Chicken

Tried this as written tonight. Was very good. I think next time I'll pound the chicken flat and marinate in the seasoning/salsa for a bit before baking - should reduce baking time by a lot. Am excited to try this again with a pineapple or mango salsa!! (also - would use low sodium taco seasoning in the future, too!) Thanks for sharing it!

Key Lime Pie VII

I made this tonight for Father's Day. Key Lime Pie is my husband's favorite. Until now, I would try a new recipe each time. We have found our standard! I cooked it for 12 mintues as suggested and used 2 cans of sweetened condensed milk. Thank you!!

Easy Pancakes

Much to my surprise, I hosted a sleepover without having pancake mix in the house. I looked up this recipe and I likely won't buy mix again! These were fluffy and delicious! I did cut the baking powder and added the vanilla as suggested. I had happy sleepover kids with full bellies!

Grilled Flat Iron Steak with Blue Cheese-Chive Butter

While eating this meal, my husband said it tasted like something we'd get at a steakhouse restaurant. It was fantastic!! We marinated for 4 hours and it was so delicious. The meat was great on it's own and even better with the butter. The blue-cheese chive butter could be an addition to any grilled steak, it was wonderful. Thank you for sharing the recipe!

Easy Shake and Bake Chicken

Easy and delicious! My kids and husband ate every bite tonight! I would use less butter next time, but it did help add to a yummy crisp coating. I used boneless/skinless chicken breast.

Easy Tilapia with Wine and Tomatoes

This was DELICIOUS! I made it just like the recipe says, except for I baked it rather than grilled it. (425 for 20-25 minutes as suggested earlier) My husband and I decided it was "company worthy" and are looking forward to making it for visitors. Our 9 year old wanted seconds!

Sweet Mustard Chicken Bake

This was delicious! I used chicken breasts for me and my husband and legs for my kids. We all liked it. My husband and I thought it may be nice made as chicken medallions, then served with the sauce over rice. Also, if we are cooking for just the adults, we may add some hot pepper flakes as well. When I shared this with a friend, she said it would be good with salmon as well.

I had ground chicken and used that, it was good, but I do think a shredded chicken would work best with this recipe. My 9 year old loved it and wanted it the next night! We also skipped the cilantro as this is not a flavor we care for.
