Slow Cooker, Easy Baked Potato Soup
This was a simple and delicious soup! Since I didn't have the exact ingredients, I did switch out a few things. I used real bacon instead of bacon bits. I also switched out the water for low-sodium chicken broth and the bouillon cubes for the Swanson's Flavor Boost packet. Finally, when it was about done, it still had not thickened up, so I made a quick roux and added it at the end. It was perfect!!!

To Die For Blueberry Muffins
WOW! These were delicious. I used buttermilk, as some had suggested; and I ran out of AP Flour, so I used cake flour instead! My husband loved them. In the morning, my daughter had half a muffin, and she said, "Mommy, these are the best blueberry muffins, ever!" I will use this recipe for all my muffins, now. The recipe doubled easily, but I didn't need to double the streussel topping. I felt that the single amount was plenty. I used brown sugar with the streussel topping.

Mini Cheesecakes
I can't wait to dig into these. Taking them to my sister's as a house warming gift. Just for kicks...I used 1.5 packages of cream cheese, and the other half of strawberry cream cheese. Adds a nice strawberry flavor. I'm going to top it with homemade strawberry syrup that I made a few weeks ago. Hmmm...mmm!
