If your trying to eat low fat, low calarie, this is not the thing to be eating, but boy are they worth straying off a diet for. My daughter doesn't like potatoes as a rule, but she really liked these, which was thrilling. As others suggested, I rubbed the skins with olive oil, and the outsides turned out soft and perfect. I also added some regular onion to the flesh, and didn't have green onion, so I used chives. They were easier to make than I thought they would be, and they are rich, so a little goes a long way. With 4 kids and a husband, it's almost impossible to find something that they all like, but these were a hit with everyone!
