Dog Treats I

Cinnamon Sugar Biscotti

This was good, maybe a little bland and needs tweaking IMHO. If I make this again, I think I'll add maybe some pumpkin and a little nutmeg. It's a good basic recipe, though. Also, you only have to wait about 5 minutes to cut it into biscotti, otherwise it can fall apart in my *limited* experience. Thanks for sharing.

Joan's Famous Mondel Brodt

This is a great basic recipe. The first time I made it, I thought it tasted a little too oily, so I cut the oil to 1/2 cup and used 1/4 cup of butter for the flavor. I also added 1/4 tsp of salt. I did not have orange extract, so I used lemon instead with some lemon and orange zest and poppy seeds. I love recipes like this that you can change around each time you make them. Thanks for sharing!

Strawberry Cake III

This is so easy and so delicious! Can't believe how much 1 egg white makes. Just a note, with a powerful Kitchenaid mixer this only took me 10 minutes, not 20, so depending on your mixer watch the timing. Thanks for the great and easy recipe.

Tomato and Red Onion Sauce

I wouldn't really consider this a "sauce," but this is a great base recipe to use as is or you can play with it. I used it the other night, added some asparagus and parm cheese, topped grilled italian bread with it for a kicked up bruschetta.

California-Thai Flank Steak

We all LOVED this. I didn't have lemon grass, so used lemon verbena instead and left out the mint, as I'm not a big fan of it, but it was still delicious and a nice change of pace. Thanks Karyn.

Sheryl's Baked Potatoes

I thought these were great, but cooked mine a little different. An easy way to slice the potato without cutting all the way down is to put a metal skewer (such as you use for shish kabob) the long way through the potato about 1/4 inch up from the bottom, then when you slice down your knife hits the skewer and it stops it. This works great for blooming onions, too. It is almost impossible to fan the potato out, so after cutting it, I cooked it halfway, then took it out, proceeded with the recipe using my own herb blend of rosemary, oregano, and basil, but finished it on the grill wrapped in foil - YUM.

Asparagus Cashew Rice Pilaf

This is a great recipe, nice change from just plain rice. The first time I made the recipe as is. Last night, I used plain white rice, doubled the onion, added some sesame oil,toasted sesame seeds, soy sauce, and leftover lemon chicken for a complete meal, so it's really versatile.

Texas Pork Ribs

These ribs are superb. I'm not usually that big on ribs and I couldn't stop eating them. Only note, if you're not big on spicy (I am), cut down on the cayenne. I didn't try the sauce, so can't rate that.

Penne, Tomato, and Mozzarella Salad

This is good, but a little bland as is, although I don't like olives so I leave them out. We like it better as a cold pasta salad after the flavors meld more. As others, I added more garlic. I also added some red wine vinegar (approx. 2 T), more tomatoes, and some uncooked green onions, now it has become a favorite.

Shepherd's Pie VI

This was really good and my teens loved it. 2 of the 3 teens would have balked at the carrots, so I left them out, but I made the potatoes more like traditional mashed potatoes with milk and a little more butter so it wouldn't be too dry and it turned out great.

Finger Lickin' Rock and Roll Artichokes

This was really good, but I liked it better hot than cold. I spread it on english muffin halves, baked them at 350 for about 15 minutes and cut into quarters. Everyone, even the "artichoke haters", loved them. Now I make them up ahead, cut them, and freeze them to pull out anytime.

African Chicken Stew

I really liked this a lot because you can tweak it to your taste. I added a little red wine vinegar and sugar which went well with the heat from the spices. Added more potatoes, as they absorb the flavor of the sauce and were really good, added water chestnuts for the same reason. I also liked it better with pork than chicken, as I thought the chicken was kind of dry. My 3 teenagers LOVED it, highest marks.
