Delicious! I didn't add the vinegar because it seemed flavorful enough without it. Incredibly healthy as well, and vegetarian approved! Wonderful source of protein and fiber- woo hoo!!!

Quinoa and Black Beans

Really healthy and filling. Added tomatoes and wrapped it all in a whole wheat tortilla. Added a little extra on the spices too. Highly recommended!

Toasted Caprese Sandwich

Really good! I will admit I just put minced garlic and live oil on the stove for the first part of the recipe and then followed the rest. HIGHLY RECOMMENDED and extra bonus that it is vegetarian.

Vegetarian Tortilla Stew

AMAZING! quick and easy and not to mention healthy and filling! i added 1 16 oz can of black beans as well and instead of 1/2 can of diced tomatoes i added 3 fresh diced ones a a 6 oz can of tomato paste. of course topped it off with some shredded cheddar and sour cream. yummmm!! highly recommended

delicious! i would do about 3/4 onion. add about 10 oz rinsed corn, 2 tomatos chooped, avocado to taste and skip the cream cheese and just add sour cream to taste

I thought it turned out well. Took quite some time to do the chopping but it was worth the effort. I seeded all the tomatoes so it wouldn't turn out watery and used an extra 2. All in all it was good. The jicama was the perfect touch
