Zucchini Chocolate Chip Cake

I loved the fact that the chocolate disguises the zucchini. Although I am a huge chocolate lover, the next time I will cut the chocolate chips down. The cake is so moist and full of chocolate flavor that the chocolate chips made some areas of cake too "moist", like big area of melted chips. I think adding nuts to this would be a good idea.

Red Cabbage

Cold or hot this a nice side dish. Let it cook for the correct amount of time to get right softness. Next time I will cut the vinegar in 1/2 and see how it tastes. We are also thinking this would be great on a hot dog.

Cherry Tomato Salad

I really liked this and I am not a huge tomato lover. I did not have olives so I cut up cucumbers into small chunks. I also added fresh basil and parsley to fresh oregano. I couldn't help but to add some dried cranberries because they were next to the nuts in the freezer. Delicious.

Zucchini Fritters

This was a nice light fritter. The corn meal was a different change and a great way to try something new with all my garden zucchini. I took advice and added 2 tbsp of spicey rub in the mix. Could have used perhaps more. My youngest put hot sauce on them and enjoyed. Easy to do.

Mom's Pie Crust

Recipe came together quite well. Easy to roll out. Had a good taste, I could taste the sugar in a way because I made 2 diff. pie crusts the same day. I don't think I would have noticed if I didn't compare. The crust had that snap when cut into but was tender when eaten.

Basic Flaky Pie Crust

I did like the flakiness of this pie crust and a true pie crust taste. This recipe def. only makes a small amount. I used it for mini quiches but I would say from the size of the ball formed it would be just good for an 8" pie. I will try to double the next time and see how it comes out.

Zucchini Pie

I used real bacon cooked well and I shredded the zucchini. The timing was on. The taste is good and is good for any meal, breakfast, lunch or dinner.

French Onion Dip

Very good. I would recommend that you make it the night before. That way all flavors blend and the onion soup has time to soften up real well. For a crowd I would double up.

Erin's Canadian Fried Dough

Perfect just like at country fairs. My kids like butter, cinnamon and sugar, and conf. sugar. WTH how many times does one have such a treat! Make sure oil is perfect temp and each side does not take long at all.

Blackberry Muffins

Fresh picked berries from backyard, oats and brown sugar......PERFECT. Dense but airy, nicely sweetened muffin. Fold berries in but dont over do it. Loved the crunchy top of turbinado sugar. Nicely browned at exact time and peeled of paper nicely.

Fresh Blueberry Cake

Very nice old fashion type recipe. I added a crumb topping to the top. I used fresh picked blueberries and ate it warm with whipped topping. Fairly moist cake which has lasted into the next day nicely. Def. recommend the 8x8 pan as in the directions.

Todd's Famous Blueberry Pancakes

Nice fluffy pancake with just the right amount of blueberries. I would say letting the mix sit an hour was a bit too much. I like my pancake mix to spread on its own when I pour onto griddle but after letting this sit for the whole hour I had to spread it out myself. I used fresh blueberries and that made the pancakes taste good, otherwise not really too much flavor in the pancake itself.

Crispy Fried Chicken

Good recipe. Wouldn't say it was the "best" ever. Tasted like most fried chicken should taste. I don't think it was the moistess chicken either. But I received compliments so I'm good. I would do this recipe again.

Touch of Spring Muffins

This muffin raised nicely. The best looking muffin I have ever made. Followed recipe and used turbinado sugar on top for a super crunch. Felt like a nice spring muffin, tasted wonderful with straw/rhub. Mmmm.

Horseradish Burgers

Recipe Group 6/9/12. Nice flavor. With a nice sear on each side they did not stick to my grill. I did not think they were too soft either. I made a mayo, horseradish and BBQ sauce to compliment the sauce with this recipe. We like our condiments so I didn't think the remainder sauce would be enough. Will make again.

Washboard Cookies

A quick and easy cookie. Moist. Not a whole lot of flavor but the brown sugar made it a nice coffee cookie. I used turbinado sugar for the top which gave it a nice topping.

Meatloaf...a Little Southwest Style

My husband eats and loves his meatloaves. He said this might have been the best one I ever made. I agree it was a tad crumbly but the taste of the salsa veggies with the onions he said was a nice touch.
