Tortellini and Artichoke Salad

Fantastic. I had dry tortellini and cooked those up and I also added black olives and pickles instead of pimentos. Also added grated radishes and carrots from my garden. This salad is wonderful and I cant wait to serve at a picnic tomorrow. I'm sure it will bring out more flavors as it sits overnight. A keeper.

Marinated Beet Salad

So easy and delicious. Step by step directions are quick and makes for a nice summer salad. Even my nephew who is picky tasted it and said it was ok. So that is a huge compliment. LOL I used yellow onion because that was what I had on hand. The juice was the best part. Mmmm.

Yellow Squash and Corn Saute

I love both of these veggies and combining them seemed to just sound yummy. The result was pleasing and using up leftovers and the tons of squash we get out of garden felt good.

Chocolate-Cinnamon Zucchini Bread

Love that this bread is a little more healthier than the usual zucchini bread with oil. I had chunky applesauce and it worked fine. The bits of apple were good. The cocoa was nice addition. Baked up right on time. I added mini chocolate chips to one loaf and kept one plain. Load cut into slices nicely which is important to me. And the loaf was moist.

Strawberry Jam

I really likes this recipe. Mostly because it didn't seem too sweet. Take your time getting it up to temp and it will all be just fine. My son said it was, "sooo good".

Very quick and easy. Make sure you give the boiling part the max. time allowed. I was surprised my crackers floated. All in all a good time to cool and everyone was enjoying.

Mayo Chicken

Moist and yummy. I used parchment paper so the chicken wouldn't stick. It is rich but a nice richness you don't get with a bland chicken recipe like plain ole' baking. I also used cheddar as I didn't have any fresh parmesan and do not use store bought shake kind.

Artichoke Spinach Pasta Sauce

Made my own alfredo and used frozen spinach well squeezed. I opted out of the tomatoes. This was cheesy and def. could be cut back if you are watching your fat content or just don't want it too cheesy. I also added some fresh cut up turkey for a one stop meal. Served over Whole Wheat Pasta it was a good meal and tasted delicious. This really could be used as a dip also, actually I tried it with a matzo cracker and it was wonderful.

Garlic-Parmesan Croutons

Tasty and crunchy. Used last of homemade bread and followed recipe using home grown herbs. These were wonderful on the French onion soup recipe I made recently. And a few left for my next salad. One could cut down on butter and still have good flavor.

Buffalo Chicken Wing Sauce

Yummy and easy. Why buy? Make your own with this recipe. Tossed this sauce with wings that were floured/seasoned/baked. Boys had them when they were sloppy and said they were delicious. Husband had them after they stood warm in oven for a while and he loved the not so sloppy version and said the taste was wonderful. No leftovers.

Lentils with Tomatoes

Very easy to make. I used fresh frozen tomatoes from last years garden and I added spinach instead of peppers as they repeat on me later. Full of protein and fiber and tasted great hot and cold.

What wonderful taste this sauce has. Its like sweet and sour. I didn't have celery and peppers don't agree with me so I eliminated them. This can be eaten cold or hot. I did use my homemade tomato soup in which I freeze into 6-8 oz chunks and it tasted the same. Easy to make and loved by all.

Healthy Pumpkin Cranberry Muffins

I substituted coconut flour/almond meal flour for the AP flour. I also sub'd applesauce/coconut oil for the veg. oil. Instead of muffins I put in 7x10 pan and sprinkled coconut on the top. Delicious and good for you.

Blueberry Muffins II

Wonderful easy recipe. I used fresh frozen blueberries. One has to make sure they drain the juice after thawing. I reduced sugar and all came out fine. Baking time was spot on. And the muffins tasted so fresh.

Angel Food Cake III

I will never buy a box with preservatives again. I DID IT! I made angel food cake. The directions were easy. Just make sure you have no egg yolks at all mixed in with whites and make sure you fold the dry ingredients. Cake cooked in a shorter time. I did balance my pan with tabs on coffee cups which was a suggestion on the Buzz. I have to say not putting anything on the pan scared me and it wasn't super easy to take off the pan, but I was careful and patient. The taste was great, and the fresh strawberries from the freezer from Spring was even better. Def. take the short amount of time to make homemade whipped cream it only adds to the whole scene.

Golden Yam Brownies

Made recipe as is, no changes. Came out moist and delicious. My friend replaced the butter with applesauce and it came out too runny so she needed to add more flour. Took longer to bake than stated, about 40 minutes needed. Very tasty. Sort of like a carrot cake tasting. Will very much so make again.

Spicy Scones

These were moist and had nice flavor. I did not have currants so I used a mix of raisins, craisins, and chopped dates. Easy recipe to follow. The dough was a little sticky so I ended up adding a tad more flour until the consistency was right to shape.
