Easy, just takes a long while for the stove top mixture to turn clear. Don't overcook as it will get real thick and then its difficult to whip. Worth the effort.

Quick and Easy Apple Muffins

These were a nice treat. Not too sweet. I would add more cinnamon next time. I substituted 1 cup Whole Wheat Flour/ 1 cup white instead of 2 cups White. I also added 5 chocolate chips and crispy topping to the top to take away from the WW flour taste. Made exactly 12 muffins and baked right on time stated.

Wild Rice Casserole II

Easy to make, and yes be patient for the cooking time. I didn't have the water chestnuts but next time I will def. add them as I am sure they taste wonderful in this. I finely chopped my MR's as I have someone in house who doesn't like MR's but didn't know they were in there.

Everything Pork Dry Rub

I love this rub as it made the pork loin very juicy and tender. I am going to triple this and save it for future uses. The loin sliced so nicely and each fairly crunchy and flavorful slice had the rub taste. Def. not spicy just right.

Marshmallow Treats

Best marshmallow treats I have ever made! Took advice of taking it loooww and sllloooow. And I used 1.5 bags of leftover smores larger marshmallows not cut up and they melted perfectly. I also used cocoa Krispies--so good. Def. recommend to fully cool.

Extreme Chocolate Cake

Cured my chocolate craving for sure!!! I substituted 1/2 of sugar with honey, and used applesauce for the oil. The cake was very moist. Loved the sweet frosting. Baked right at estimated time.

Sweet and Tangy BBQ Sauce

A nice recipe that stuck to the meat nicely. Had enough to mix with pulled pork too from this one recipe. Good go to recipe. Why buy? I used homemade ketchup. So had a nice fresh distinct flavor.

Whole Wheat Pancake Mix

Love having a healthy pancake mix available. I put it in a zippie bag and in the freezer with the directions written on the bag. So my teenage boys can help themselves.

Good Old Fashioned Pancakes

Wonderful fluffy pancake. I always let my pancake mix for a few minutes before putting on the griddle. I added about a 1/2 cup blueberries after using 1/2 the batter. Freezes real well.

Hot Pepper Jelly BBQ Sauce

This is the basis for an easy recipe that can be added to, doubled, or tweaked. I have added minced peached, and also have added extra hot sauce to please my youngest. So have fun with it.

Mom's Zucchini Bread

A good basic zucchini recipe that tasted good. Mild in flavor and has good moisture. Took closer to the 60 minute mark to finish to make sure the inside was done. I sliced the loaves up packaged two slices in each sandwich bag for a bake sale. The people who bought them appreciated a nice summer recipe that they often do not make themselves.

Tortellini and Artichoke Salad

Fantastic. I had dry tortellini and cooked those up and I also added black olives and pickles instead of pimentos. Also added grated radishes and carrots from my garden. This salad is wonderful and I cant wait to serve at a picnic tomorrow. I'm sure it will bring out more flavors as it sits overnight. A keeper.

Marinated Beet Salad

So easy and delicious. Step by step directions are quick and makes for a nice summer salad. Even my nephew who is picky tasted it and said it was ok. So that is a huge compliment. LOL I used yellow onion because that was what I had on hand. The juice was the best part. Mmmm.

Chocolate-Cinnamon Zucchini Bread

Love that this bread is a little more healthier than the usual zucchini bread with oil. I had chunky applesauce and it worked fine. The bits of apple were good. The cocoa was nice addition. Baked up right on time. I added mini chocolate chips to one loaf and kept one plain. Load cut into slices nicely which is important to me. And the loaf was moist.

I really likes this recipe. Mostly because it didn't seem too sweet. Take your time getting it up to temp and it will all be just fine. My son said it was, "sooo good".

Very quick and easy. Make sure you give the boiling part the max. time allowed. I was surprised my crackers floated. All in all a good time to cool and everyone was enjoying.

Mayo Chicken

Moist and yummy. I used parchment paper so the chicken wouldn't stick. It is rich but a nice richness you don't get with a bland chicken recipe like plain ole' baking. I also used cheddar as I didn't have any fresh parmesan and do not use store bought shake kind.

Artichoke Spinach Pasta Sauce

Made my own alfredo and used frozen spinach well squeezed. I opted out of the tomatoes. This was cheesy and def. could be cut back if you are watching your fat content or just don't want it too cheesy. I also added some fresh cut up turkey for a one stop meal. Served over Whole Wheat Pasta it was a good meal and tasted delicious. This really could be used as a dip also, actually I tried it with a matzo cracker and it was wonderful.
