About this Cook
Mom of 3. Ages 25, 16, 15. Love to cook my favorites and my families favorites. My Mother went to work when I was 12 yrs old and from then on I shopped, cooked and did the dishes. Never minded doing it and always wanted to have my very own kitchen. Now I live in the country, have a wonderful home with gardens both veggies and flowers. I attend a Congregational church very close to home and am a believer in Jesus Christ as my personal savior. I have wonderful friends from my childhood, church and my community. I love being an Aunt to 10 nieces and nephews. I am a stay at home Mom and am ever so grateful to my hardworking husband. Because of having PCOS and an inactive metabolism it is difficult for me to lose weight. I continue to try. I am learning to make nonprocessed foods and trying to stay away from GMO's the best I can. I love homemade anything from scratch. This site can make it difficult to lose weight though. LOL I am thankful for this site as I have tried lots of new stuff.
My favorite things to cook
My favorite things to cook are comfort foods like macaroni and cheese. But really I like to cook a full menu. Putting together a dinner party, birthday get togethers, holiday feasts really get me going. I have solid favs that I will never tire of. I am always trying to learn to eat healthier and have begun eating as much nonprocessed food as possible. It is an exciting journey and my body feels better doing it. There will always be parties, superbowls, and holidays that I will always enjoy cooking and baking for but after they're over-its over.
My favorite family cooking traditions
Breakfast- Bacon is #1. My sister has an egg casserole that is tradition at Christmas and Easter for all us siblings. Lunch- Good ole tunafish. I love tunafish. Making a salad is my fav. thing to do and a good split pea soup. Dinner-My kids all have different favs that we cook for their special occassions. But Mac n Cheese is a big family fav. Dessert-I make an award winning carrot cake. And Christmas holds traditional recipes such as Date nut pinwheels, haystacks, dipped gingersnaps, and Mexican wedding cakes, snowballs, and PB Blossoms. I am adding AR's eclair cake now.It is the most requested dessert right now for 2012.
My cooking triumphs
Pulling off a good get together with a variety of foods makes me happy. I prepare way in advance and take several days beforehand to make it all happen. I run a Pulled Pork Sandwich booth for my church and that is always a good feeling when all is said and done.
My cooking tragedies
My worst was my first Thanksgiving here in my own home with my in-laws. Bought a fresh turkey and it was NOT done when I thought it would be and of course planned the whole meal out accordingly. And my XXLG shrimp over cooked and shriveled down. Have def. overcooked things in my day and that bums me out. I always make mental or physical notes on my recipes to make sure tweaks or mistakes are remembered.

Beef Stew VI
Excellent Easy Recipe loved by all in this house. Followed as recipe states and came out perfect. I don't use cornstarch so I used a 1/2 flour 1/2 coconut flour mixture which always works great. Also added some sweet potato, yum.

Creamed Chipped Beef
Used Real Dried Beef not in a jar but from a meat deli in PA. Yes def. way too much flour for that much milk. Just stick with a basic roux ratio. And I added 1/2 less brown sugar but probably didn't need any. My teenagers thought this was fantastic.

Easy Pizza Sauce III
Homemade tomato sauce from last years garden added to the wonderful taste of this pizza sauce. Easy and enjoyed by all. I am a picky pizza sauce girl so this made me happy.
