Downeast Maine Pumpkin Bread

I made this recipe a couple of times : first with half the ingredients and second just a third and both times it came out great! Very dense, but I fround from reading reviews of other recipes, that's your typical pumpkin bread and I actually like it - very hardy! I also increased the spices a bit(more cloves and cinnamon, as I like to know I'm eating an autumn flavored desert). And skipped the water(maybe that would have made it more fluffy?) but I will try adding some applesauce as others suggested or maybe some sour cream. I think it would add some richness. Also I mixed in and sprinkled toasted pumpkin seeds on top. I kept it simple because I'm bringing it for a Thankgiving dinner, otherwise I would also add toasted walnuts. Even though the recipe itself is right on the money, one has to add a few personal touches

Apple Squares

Made it tonight for a Thanksgiving party. Really tasty! I love apples and this reminded me of a very similar recipe that my mom used to make. I doubled the recipe like most of the other reviewers, cut the sugar in half, used 4 gala apples, shredded instead of chopped(will increase to 5 next time) and I squeezed most of the juice out, also ground walnuts ,used baking soda instead of baking powder(always works better for me). Baked in a 9x13 dish and it came out very fluffy and not too sweet, more like apple bread(I like that!) skipped the sugar on top, only used cinnamon and after cooled and cut, I sprinkled vanilla powder sugar(home made for x-mas cookies). It's the only topping fine enough to stick, as I noticed some of the comments posted that sugar was falling off. Will make again:)

Tiramisu Cheesecake

My first attempt to cheesecake. I chose it because my son loves tiramisu and my husband loves cheesecake. So I thought : what a perfect combo! The flavor was great, but waaay too sweet! Definitely cut some the sugar and leave out the mascarpone, even though it gave it smoother texture, it took away from the tangy flavor that I was expecting. Also the recipe doesn't call for baking the crust first, I substituted the ladyfingers with graham crackers and if you do this, I strongly suggest baking it for at least 15 min. I baked it for only 7 min, it really needed twice that. I also left out the flour as one reviewer recommended. I'll add it next time to give it more caky consistency. I served it with fresh mango and blackberries to cut the sweetness, still not enough. Could only have a thin sliver. All in all I think it's a good recipe,except for the sweetness.
