Ultra Easy Cream Cheese Dip

I used an electric beater, and added dill and onion powder. I love the simplicity and variability, but there's no way it should have that much milk. I used half and it was just right.

Chicken Noodle Casserole

Very tasty, but a TON of work. For a relatively simple chicken casserole you'll dirty four pots. That being said, I do like how it's made with a roux instead of junky processed canned soup. I used whole wheat egg noodles and added peas as well.

Orzo with Kale

I love the contrasting textures - the crispy fried garlic and kale with the smooth, soft orzo. The lemon gives it a surprising brightness, and its just the perfect light summer dish!

Pineapple Bread Pudding

This was fantastic - finally a recipe my 4-yo and 1-yo both love! I used whole wheat bread, reduced the sugar to 2/3 cup, and added an extra egg and a little milk, and it came out fantastic!

Baked Ham with Maple Glaze

I agree with both of the other reviews. This is really tasty, and SUPER easy with ingredients you pretty much always have on hand. I would DEFINITELY suggest lining the roasting pan with foil, as burned on sugar is extremely difficult to battle. I just made this tonight and thus haven't won the battle yet - maybe it'd be easier to just buy a new pan? Will definitely use this recipe again.

Caribbean Sweet Potato Salad

This is a delicious, fun, and funky summer salad. You have to double it, because you are going to want extras, and it's almost too much work for just a small amount. The cooking instructions for the potatoes are a bit cumbersome, but clearly designed with keeping dishes low. I just cook them all separately - the corn in the microwave, boil the white potato, and steam the sweet potato (boiled sweet potatoes can get waterlogged). Of course, then I have 2 big pots dirty, but whatever. It's a totally great recipe.

Caramel Shortbread Squares

I made these for a cookie exchange and they were voted the best ones there! Like many other reviewers, I doubled the recipe in a 13 x 9 pan, and docked the shortbread before baking it. Delicious! (Anything made with sweetened condensed milk is a definite keeper!)

Three Bean and Artichoke Salad

I loved the preparation...pop open a few cans and mix it all up. However, it's missing...something. I couldn't figure it out, but playing around with spices might definitely improve this recipe

It was a good use of leftover turkey, but a bit bland. I used smushed up crackers on top, and that was really good - added an extra saltiness.

Hot Spinach and Artichoke Dip

Basil Shrimp Fettuccine

This was a very tasty recipe; the first time I've ever cooked shrimp! However, it only gets three stars because it's consistency is a little gloppy. I'm wondering if using stock or regular milk (instead of evaporated milk) might have led to a better consistency.
