BREAKSTONE'S Sour Cream Scalloped Potatoes

Reviewed: Apr. 25, 2011
This was fantastic! I left out the ham and the parmesan and it was still amazing. Most people would want to add some salt without those two ingredients, but for me it was just right! Finally, a super easy and delicious potato recipe!

Butternut Squash Casserole

Reviewed: Nov. 1, 2010
This tastes almost exactly like pumpkin pie, if you modify it like others have suggested with the cinnamon and nutmeg. I halved the sugar in both the dish and the topping and it was still way too sweet for us, but if you have a sweet tooth, you will love it!

Poached Orange Pears

Reviewed: Feb. 11, 2009
These were very easy to prepare and turned out to be an elegant dish! I loved that the rest of the ingredients are items I often have on hand. I served these over warm ginger bread cake (from a mix) with a dollop of vanilla ice cream and the syrup from the pears poured over the top. Delicious and great for guests!

Vegetable Filo Pie

Reviewed: Jan. 18, 2009
This was very good and had much better flavor than I expected it to have. I used a little more cheese than called for and mixed feta with muenster since I didn't have enough feta, and that had a more mild flavor which I liked. I used broccoli, zucchini, onions, carrots and sweet potato and 1 leek, which I did not steam with the rest of the veggies (just added to the mixture before baking). I marinated the veggies and spices for about an hour in a balsamic vinaigrette and then added the cheese and egg mixture before putting it all together. I think this could possibly use more cheese / egg mixture, but the low amount kept the dish lighter and healthier. Overall this was very good and a great way to get in lots of veggies in one meal! I gave it four stars because I found the recipe to be somewhat vague. Thanks to all the other reviewers for their suggestions / modifications.

Too Much Chocolate Cake

Reviewed: Jan. 18, 2009
This was absolutely DELICIOUS. I'm not a huge fan of chocolate cake, but I made it for company and everyone had two slices and went home with some too! SO good and incredibly easy. I didn't have as much sour cream as I needed so I used 1/3 sour cream and 2/3 plain (whole fat) yogurt - turned out great! Thanks for the recipe, I'll definitely make this again.

Satiny Chocolate Glaze

Reviewed: Jan. 18, 2009
I've always made a chocolate glaze recipe almost exactly like this (my mom's recipe) but I've never seen it written anywhere. This one includes a tiny amount of vanilla, which my mom's doesn't have and I liked the subtle addition.

Fabulous Fajitas

Reviewed: Jan. 15, 2009
My husband really likes this dish and it is a super easy way to make fajitas. But I have to agree the Italian seasoning, while tasty, is not very authentic for fajitas! However, we make it on a regular basis when in a time crunch.

Sauteed Swiss Chard with Parmesan Cheese

Reviewed: Jan. 6, 2009
This was absolutely delicious! I had never eaten chard before but my organics delivery included a bunch so I made this recipe and even my non-vegetable eating husband liked it. I may have cooked it a little too long because some of the wilted chard turned an unappetizing shade of brown, but it still had really good flavor! I will definitely make this again. Thanks DannyBoy!

Cheesy Potatoes I

Reviewed: Jan. 5, 2009
These had good flavor, but the sauce was incredibly greasy and liquidy. I may have added a little too much milk, but I halved the amount of butter, and added some flour to the milk before adding it so I'm not sure what went wrong. I will make it again but definitely need to tweak the sauce. Overall, very easy to make.

Quick and Easy Sauteed Spinach

Reviewed: Dec. 3, 2008
This was fantastic! I will always make spinach like this from now on. When I read the recipe, I thought 10 mins would be too long and make the spinach mushy, but it was perfect. I used 2 cloves of chopped fresh garlic (instead of the salt) and added that as soon as the oil heated up, and then sauteed it for about 1 minute to release the flavor before I added the spinach. My husband who hates the "spinach" flavor of this vegetable, ate his whole serving for once.
