Creamy Chicken and Wild Rice Soup
Awesome Restaurant Quality! Made minimal changes....DOUBLE THE RECIPIE...YOU WILL BE GLAD YOU DID! Always start with a mirepoix(carrots,celery,onion)! Used a whold bag of finely chopped carrots and a whole bag peeled and finely chopped celery. You want the celery,carrots and onions to be a little bigger in size than the rice. Fried those in a little oil for about 5 minutes then added 1 cup finely chopped onions to that mix and sauteed' for another 5. Also used a rotisserie chicken that I shreded, leaving off the skin. Also down graded the flour to 1/2 cup when making the roux'(flour and butter. MUST add the liquid to the roux' NOT the roux' to the liquid or you will get lumps. Also used a 6.5oz package of wild rice. Outstanding soup! My daughter ate if for 3 days straight. After sitting overnight, the soup became way too thick, but I just added more chicken stock and it was excellent.

Old Fashioned Peach Cobbler
Crust Recipe NOT CORRECT! Made the crust EXACTLY as stated. Used one cup of butter flavored shortening that was room temp. Came out like a thick, sticky pancake batter. Could not even roll it out it was so sticky. Made 2nd batch in my food processor using the dough blade. Used Ice cold unsalted butter. Should have stopped at 3/4 cup but did not. Had to add more flour to get it right. You need to stop adding shortening when the flour mixture resembles coarse sand with rocks in it. Then add the ice cold water and egg. Shortening or butter needs to be COLD! Reading other reviews on the peach mixture, I used half brown sugar and half white. Cut back on the juices to 1/4 cup each and it still came out runny even with 2 1/2 T of corn starch. Will try Elnore's Peach cobbler next. Just way too much trouble with this recipe.

Delicious Ham and Potato Soup
Best Ham and Potato Soup EVER! Like the recipe said, you can add what ever you want. I cut up 12oz of bacon and fried that until almost crisp then saute'ed the onions and celery in the grease. Instead of milk I used heavy cream. I doubled the recipe and thank goodness because my 6,8 and 11 year old children could not get enough!
